Red Velvet Brownies with Cream Cheese Frosting

Spray a 8x8 cake pan with PAM
- Frosting:
- 1/2 cup unsalted butter, at room temperature
- 1-1/2 cups sugar
- 2 eggs
- 2 tsp vanilla extract
- 1-1/4 cups all purpose flour
- 1/4 tsp salt
- 3 tbsp cocoa powder
- 2 tbsp red food coloring
- 4 oz 1/3 less fat cream cheese, softened
- 4 oz unsalted butter, softened
- 2 cups confectioners sugar
Candy Bar Tarts

Heat oven to 450°F. Unroll pie crusts on work surface
- 1 box refrigerated pie crusts, softened as directed on box
- 2 bars (2.07 oz each) milk chocolate-covered peanut, caramel and nougat candy (Snickers)
- 4 oz (half of an 8-oz package) cream cheese, softened
- 2 tablespoons plus 2 teaspoons sugar
- 1 egg
- 2 tablespoons sour cream
- 2 tablespoons creamy peanut butter
- 1 tablespoon whipping cream
- 1/4 cup milk chocolate chips
Dreamy Chocolate Icebox Cake

Preheat oven to 350 degrees F
- 1/2 cup margarine, melted
- 1 cup pecans, chopped
- 1 1/2 cup graham cracker crumbs

- 1 3-ounce package vanilla instant pudding mix

To make the custard, mix the egg yolks, salt, and the granulated sugar together until they are combined
- 9 large egg yolks
- 1/4 teaspoon of salt
- 1/2 cup granulated sugar

- 1 T. dried thyme
- 1 T. dried oregano

Pie Crust: Put all the dry ingredients into a large bowl
- Pie Crust:
- 2 c. all-purpose flour
- 1 tsp. salt
- 3/4 c. shortening
- 5-6 tbsp. cold water

- 2 c. skim milk
- 1/2 c. heavy cream
- 1/2 c. granulated sugar
- 3 eggs
- 2 tsp. pure vanilla extract

Combine the flour, baking soda, and salt and set aside
- 2 1/4 c. (280 g.) unbleached all-purpose flour
- 1 tsp. baking soda
- 1 tsp. salt
- 1 c. dark brown sugar, firmly packed
- 12 T. unsalted butter, at room temp
- 1/2 c. sugar
- 1 T. light corn syrup
- 1 large egg plus 1 large egg yolk, at room temp
- 2 tsp. pure vanilla extract
- 2 c. (390 g.) chocolate chips
New England Style Clam Chowder

1. Steam the clams until they open
- one about one gallon of clams
- 1 cup salted water
- 3 slices of bacon
- 3 tablespoons of butter
- 1 medium sweet onion, minced
- 1 stalk of celery, chopped
- 1/4 cup all-purpose flour
- 1 medium russet potato, peeled and diced into 1/2 inch cubes
- 1 1/2 cups cream
- salt and pepper as needed
- Tabasco and/or Worcestershire sauce as needed
Cheesy Bacon Bombs

Cube up the cheese, and cut each biscuit into fourths
- 1 can (8 ct.) flaky layers biscuits
- Cubed mozzarella cheese (one 1" cube per bomb)
- 2 lbs. bacon (1 slice per bomb)
- Bamboo skewers or toothpicks
- Oil for frying (such as Canola)
