Ingredients

  • 3

    sweet potatoes (washed), cut into thin slices

  • 1

    sweet onion, chopped into small pieces

  • 1

    cup fresh spinach leaves,with stems removed

  • 1

    cup sour cream

  • 1

    cup milk

  • 1/2

    cup grated Parmesan cheese

  • 1/2

    cup grated cheddar cheese

  • 3

    tablespoons Pantry Club Gourmet Onion Chive Dip Seasoning*

  • Optional: Salt and pepper to taste

Directions

Preheat oven to 350 degrees. Boil sliced sweet potatoes till slightly tender' about 10 minutes. Drain potatoes and layer half in baking dish. Layer fresh spinach evenly on top of potatoes,then layer remaining potatoes evenly on top of spinach. Whisk together sour cream, milk, cheeses, chopped onion, and Pantry Club Gourmet onion Chive Dip Seasoning. Pour mixture over potatoes and spread it evenly. Cook 25 minutes until top is golden brown. Let cook for a few minutes then serve. *Purchased at Sam's Club
