Easy Spanish Rice in the Rice Cooker

Place the rice in the bottom of the rice cooker and then add the diced tomatoes and water
- 2 cups rice
- 1 14-ounce can diced tomatoes, with juice
- 3 1/2 cups water
- 1 small onion, diced
- 3 bullion cubes or 3 tsp. Better than Bullion
- 3 T. chili powder
- 1 tsp. salt
- 1 tsp. cumin or smoked cumin
- 1/2 tsp garlic powder
Perfect Apple Pie or Caramel-Pecan Pie

Heat oven to 425°F. Place 1 pie crust in ungreased 9-inch glass pie plate
- Topping:
- 1 1 1 box refrigerated pie crusts, softened as directed on box
- 6 6 6 cups thinly sliced, peeled apples (6 medium)*
- 3/4 3/4 3/4 cup sugar
- 2 2 2 tablespoons all-purpose flour
- 3/4 3/4 3/4 teaspoon ground cinnamon
- 1/4 1/4 1/4 teaspoon salt
- 1/8 1/8 1/8 teaspoon ground nutmeg
- 1 1 1 tablespoon lemon juice
- 1/3 1/3 1/3 cup caramel ice cream topping
- 2 to 4 2 to 4 4 tablespoons chopped pecans.
Boston Cream Poke Cake

Make cake mix according to directions and bake in a well-greased 9x13 pan
- 1 box yellow cake mix plus the ingredients needed to make cake; eggs, oil and water
- 2 (3.4oz) boxes instant Vanilla or French Vanilla pudding
- 4 cups milk
- 1 tub Chocolate Frosting
Guava Chiffon Cake

Lightly grease the bottom of a cake pan (9×13-inch rectangle or 12-inch round) with cooking spray
- Guava Chiffon Cake:
- 2 3/4 cups cake flour
- 1 teaspoon salt
- 4 teaspoons baking powder
- 2/3 cup sugar
- 1/2 cup vegetable oil
- 1/2 cup water
- 3/4 cup guava nectar concentrate (we used Hawaiian Sun brand), thawed
- 5 egg yolks (reserve the whites for the meringue), slightly beaten
- 2 teaspoons vanilla (we used Hawaiian Vanilla Company brand)
- 10-15 drops red food coloring
- Meringue:
- 7 egg whites
- 1/2 teaspoon cream of tartar
- 1/2 cup sugar
"Off the Hook" Cocktail Spread

Preheat the oven to 400 degree F
- 2 pounds fresh or frozen white flesh fish (like cod or halibut) fillets, thawed and skinned
- 2 cups mayonnaise
- 1/2 teaspoon dried dill
- 1/2 teaspoon white pepper
- 1/8 teaspoon lemon juice
- 2 cups diced celery (4 stalks)
- 1 medium-sized red bell pepper, diced (about 2/3 cup)
- 1/2 cup cocktail sauce

- 6 tablespoons butter, softened
- 3/4 cup sugar
- 1 egg
- 1-1/2 teaspoons milk

Chocolate Marble Cheesecake

- 3 packages (8 oz. each) cream cheese, softened
- 1/2 cup dairy sour cream
- 2-1/2 teaspoons vanilla extract, divided

Old-Fashioned Coconut Cream Pie

For the pie: In a medium saucepan, combine half and half, coconut milk, egg yolks, sugar, cornstarch and salt
- Coconut Cream Pie:
- 1 can coconut milk (can be found in the Asian foods section)
- Half-and-half or heavy cream (enough to add to the coconut milk to make 3 cups)
- 3 egg yolks
- 3/4 cup white sugar
- 1/3 cup cornstarch
- 1/4 teaspoon salt
- 1 cup flaked coconut, toasted*
- 1 teaspoon vanilla extract
- 1 teaspoon coconut extract
- 1 recipe graham cracker crust (below) or traditional pie crust
- Fresh Whipped Cream, lightly sweetened
- Graham Cracker Crust:
- 12 whole rectangular graham crackers
- 1 stick butter, melted and slightly cooled
- 3 tablespoons sugar
