Sopa de Pollo Boricua

This Puerto Rican dish is a twist on the classic chicken noodle soup
- 10 cups water
- 2 chicken breasts, 3 chicken thighs with some of the skin removed (seasoned with Adobo Goya, oregano and cumin to your taste), cut in cubes
- 1 chicken bouillon cube or packet
- 1 teaspoon Goya sazon seasoning
- 4 garlic cloves, cubed
- 4 to 5 sprigs cilantro, chopped
- 1/2 cup sofrito
- 1 tsp oregano
- 2 potatoes, cubes
- 3 to 4 carrots, peeled and sliced
- 1 cup fine soup noodles
Chocolate Marshmallow Meltaways

In a large bowl, cream shortening and sugar until light and fluffy
- FROSTING:
- 1/2 cup butter-flavored shortening
- 3/4 cup sugar
- 1 egg
- 1/4 cup 2% milk
- 1 teaspoon vanilla extract
- 1-3/4 cups all-purpose flour
- 1/2 cup baking cocoa
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 18 large marshmallows, halved
- 3 tablespoons butter, softened
- 3 cups confectioners' sugar
- 3 tablespoons baking cocoa
- 1/8 teaspoon salt
- 4 to 6 tablespoons 2% milk
Sweet Slow Tenderloin

Mix ingredients above. Pour over Tenderloin in the crock pot and cook on low for 6 hours
- 2 pound Pork Tenderloin
- 1/4 cup low sodium soy sauce
- 1 TBS Yellow Mustard
- 2-3 TBS maple syrup
- 2 TBS olive oil
- 2 TBS Diced dried onions
- 1 1/2 TSP Garlic Salt or Powder
Simple Delicious Dark Chocolate Cookies

Preheat Oven to 375. Combine cake mix, oil and eggs
- Dark Chocolate Cake Mix
- 2 Eggs
- 1/2 c Oil
- 1 c Sugar

Mix brownies according to directions, bake for 20-25 minutes in a 9x13" buttered baking dish
- 1 box fudge brownie mix
- 3/4 cup salted peanuts, roughly chopped
- 1 cup chopped Reese’s peanut butter cups
- 1 1/2 cups milk chocolate chips
- 1 1/2 cups creamy peanut butter
- 1/2 tablespoon butter
- 1 3/4 cups Rice Krispies Cereal
Snickerdoodles Cookies

1. HEAT oven to 400 degrees F
- 2 cups sugar, divided
- 1 cup Crisco® Butter Shortening OR 1 stick Crisco® Butter Shortening Sticks
- 2 large eggs
- 2 tablespoons milk
- 1 teaspoon vanilla extract
- 2 3/4 cups All Purpose Flour
- 2 teaspoons cream of tartar
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- 2 teaspoons ground cinnamon
South-of-the-Border Mac 'n Cheese

Prepare macaroni and cheese in large saucepan according to package directions, except omit milk
- 1 pkg (7.25 oz each) macaroni and cheese dinner
- 1 pound ground sirloin beef (90% lean)
- 1 can (10 oz each) Diced Tomatoes & Green Chilies, undrained
