Mrs. Wilson’s Chocolate Chip Refrigerator Cookies

Preheat the oven to 350 degrees
- 3 3/4 cups all purpose flour
- 1/2 teaspoon baking soda
- 1 1/2 cups butter
- 3/4 cup brown sugar
- 3/4 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 teaspoon almond extract
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 3/4 cups good quality chocolate chips, either dark chocolate or milk chocolate
Chocolate Spa Cake

Preheat oven to 350 degrees F
- 3/4 cup (4-1/2 ounces) semisweet chocolate chips
- 3 tablespoons low-fat (1%) milk
- 2 tablespoons unsalted margarine
- 1 cup sugar
- 3 eggs
- 1 cup whole-wheat flour
- 1 cup all-purpose flour
- 2 teaspoons baking soda
- 3/4 cup chilled coffee
Chicken Chilaquiles

Heat oil in a skillet over medium heat, until hot
- 1/2 c. oil
- 10 corn tortillas, cut into 1/2-inch strips
- Optional: salt to taste
- 1 c. shredded mozzarella cheese
- 1 c. shredded Cheddar cheese
- 2 c. cooked chicken, shredded
- 28-oz. can mild chile verde sauce, divided
Sausage Hash Skillet

In a large heavy skillet over medium heat, cook the sausage until no longer pink; drain and set aside
- 1/2 pound bulk pork sausage
- 2-1/2 cups cubed cooked potatoes
- 1 cup thinly sliced sweet onion
- 1 cup sliced fresh mushrooms
- 2 tablespoons butter
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Cheeseburger Biscuit Bake

Preheat oven to 400 degrees
- 1 lb ground beef or ground turkey
- 1/4 cup chopped onion
- 8 oz tomato sauce
- 1/4 cup ketchup
- black pepper, to taste preference
- 2 cups shredded cheddar cheese
- 12 oz tube refrigerator biscuits (you will need 9 biscuits)
Baked Chicken Egg Rolls

In a small bowl, combine the first six ingredients
- 1-1/3 cups chopped fresh broccoli stir-fry vegetable blend
- 1 cup shredded cooked chicken breast
- 4-1/2 teaspoons reduced-sodium soy sauce
- 2 teaspoons sesame oil
- 2 garlic cloves, minced
- 1/2 teaspoon ground ginger
- 8 egg roll wrappers

- 2 (8-oz.) packages cream cheese, at room temperature
- 1 cup powdered sugar
- 2 1/2 teaspoons vanilla extract

One-Pan Pasta and Meatballs

1 In 10-inch skillet, heat water and pasta sauce to boiling
- 1 cup water
- 1 jar (25.5 oz) pasta sauce (any flavor)
- 1 1/2 cups uncooked elbow macaroni
- 20 frozen cooked Italian-style or regular meatballs (1 inch)
- 1 can (2 1/4 oz) sliced ripe olives, drained
- Grated Parmesan cheese, if desired
Buffalo Chicken

- 4 boneless skinless chicken breast halves (5 ounces each)

- 1/4 cup buffalo wing sauce
- 1/4 cup shredded provolone cheese
