Stuffed Italian Zucchini

Ingredients

  • 4 medium zucchini
  • 1 large onion, chopped
  • 1 clove garlic, minced
  • olive oil
  • 1 can stewed tomatoes
  • 1 T. Italian seasoning
  • 1/2 - 3/4 cup seasoned bread crumbs
  • 1/2 cup parmesan
  • 1/2 stick melted butter
  • salt & pepper

Preparation

Step 1

Parboil zucchini for about 10 minutes. Cut in half lengthwise and scoop out center pulp. Saute onion, zucchini and garlic in olive oil. Add tomatoes and Italian seasoning, simmer for 10 minutes. Add breadcrumbs and parmesan until looks like oatmeal. Brush zucchini shells with butter, add zucchini stuffing and drizzle with the rest of the butter. Bake at 400 for about 20 minutes, broil at the end to brown.
