Tri-tip Sliders With Garlic Provolone Sauce

- Provolone Sauce:
- 2 lbs Tri-tip Roast; Cooked, cooled and sliced
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 1 tsp Ground Black Pepper
- 1 tsp Salt
- 16 Slider Rolls
- 4 Tbsp Butter
- 1 Tbsp Unsalted Butter
- 1 Tbsp All Purpose Flour
- 2 cups Whole Milk, heated
- 1 cup Grated Aged Provolone Cheese
- 1/4 cup Grated Parmigiano Reggiano
- 1 tsp Kosher Salt
- 1 tsp Garlic Powder
- 1/4 tsp Freshly Ground Black Pepper
- 2 cups Garlic Provolone Sauce
- 2 cups Caramelized Onions
- 4 cups Prepared Beef Au Jus
Stuffed Ground Beef Rolls

In a bowl, blend ground beef, egg, salt, pepper, bread crumbs and water, mixture will feel quite moist
- 1 lb extra lean ground beef
- 1 egg
- 1 tsp salt
- 1/4 tsp pepper
- 1/4 cup fine dry bread crumbs
- 1/2 cup water
- 1 pkg (3oz) cream cheese with chives or pimento
- 2 tablespoons butter or margarine
- 2 tablespoons flour
- 1-1/2 cups beef broth or consomme
- 1/2 cup sour cream
- 1 tsp dried tarragon leaves

Ultimate BBQ Burger with Chipotle Ranch Sauce

In a mixing bow, combine the sugar, steak seasoning, chili powder, smoked paprika, cumin and allspice
- 1 tablespoon sugar
- 1 tablespoon steak seasoning
- 1 tablespoon chili powder
- 2 teaspoon smoked sweet paprika
- 1 teaspoon cumin
- 1/2 teaspoon allspice
- 2 pounds lean ground sirloin
- 2 tablespoon Extra Virgin Olive Oil
- 8 slices cheddar cheese
- 1/4 cup buttermilk
- 1/2 cup sour cream
- 1 chipotle in adobo, chopped, plus 1 tablespoon adobo sauce
- 2 tablespoons chopped dill
- 2 tablespoons chopped parsley
- 2 tablespoons chopped chives
- Salt and freshly ground black pepper
- Lettuce
- Tomato, sliced
- Red Onion, sliced into rings
- Deli size pickley, sliced lenghtwise
Roll Up Steak

Preheat oven to 350°F. Heat one tablespoon of the oil in a pan over medium-high heat
- 2 tablespoons canola oil, divided
- 3 tablespoons chopped garlic
- 2 sweet onions, such as Vidalia, chopped
- 2 cups mushrooms, thinly sliced
- 1/2 tablespoon kosher salt
- 1/2 tablespoon freshly ground black pepper
- 2 pounds flank steak
- Kosher salt

Eggs Caesar-Stuffed

- 1 to 2 teaspoons anchovy paste

Chicken Enchiladas with Creamy Green Chile Sauce

Stir the soup and sour cream in a small bowl
- 1 can (10 3/4 ounces) Campbell's® Condensed Cream of Chicken Soup (Regular or 98% Fat Free)
- 1/2 cup sour cream
- 1 tablespoon butter
- 1 medium onion, chopped (about 1/2 cup)
- 1 teaspoon chili powder
- 2 cups chopped cooked chicken or turkey
- 1 can (about 4 ounces) chopped green chiles
- 8 flour tortillas (8-inch), warmed
- 1 cup shredded Cheddar cheese or Monterey Jack cheese (about 4 ounces)
Vegitarian - Roasted Tomato and Butternut Squash Rigatoni

- 3 pounds ripe heirloom or plum tomatoes
- 1 medium butternut squash, seeded and diced into 1 1/2-inch cubes
- 1/4 cup EVOO – Extra Virgin Olive Oil, divided, plus some for drizzling
- 2 tablespoons fresh thyme, chopped
- Salt and pepper
- Freshly grated nutmeg
- 1 bulb garlic, top end cut to expose cloves
- 4 tablespoons butter
- A fat pinch saffron threads
- 1 cup chicken stock
- 1 pound rigatoni
- A fat handful of basil, torn
- 1 cup freshly grated Parmigiano-Reggiano, plus some to pass at table
Roasted Cornish Game Hens with Garlic, Herbs and Lemon

Preheat oven to 450 degrees F
- 4 Cornish game hens, patted dry with paper towels
- 8 thin slices of butter
- 4 sprigs each of fresh rosemary and thyme (or herbs of choice) plus some extra leaves of each
- 4 large cloves garlic, peeled
- 1 lemon, scrubbed well and cut into quarters
- Extra virgin olive oil
- Salt and freshly ground black pepper
- 1/2 cup dry white wine
- 1/2 cup chicken broth
Slow Cooker Chicken Noodle Soup

Season chicken with salt and pepper, to taste
- 1 1/2 pounds boneless, skinless chicken breasts
- Kosher salt and freshly ground black pepper, to taste
- 8 cups chicken stock
- 4 cloves garlic, minced
- 1 onion, diced
- 3 carrots, peeled and diced
- 3 stalks celery, diced
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 2 bay leaves
- 8 ounces spaghetti, broken into thirds
- Juice of 1 lemon
- 2 tablespoons chopped fresh parsley
Summer Salad

Remove husks from corn and grill over medium heat for 10 minutes
- 1 pint grape tomatoes
- 1 ripe avocado
- 2 ears of fresh sweet corn
- 2 tbsp fresh cilantro, chopped
- HONEY LIME DRESSING
- Juice of 1 lime
- 3 tbsp vegetable oil
- 1 tbsp honey
- Sea salt and fresh cracked pepper, to taste
- 1 clove garlic, minced
- Dash of cayenne pepper
