Chili Cheesy Hash Brown

Preheat oven to 400 degrees F
- 2 tablespoons Extra Virgin Olive Oil
- 1 onion, chopped
- 2 tablespoons chili powder
- 2 teaspoons ground cumin
- 1/2 cup tomato paste
- 1 pound ground beef
- Salt and Pepper
- 1 15-ounce can red kidney beans, drained and rinsed
- 1 15-ounce can diced tomatoes
- 1 1-pound bag frozen shredded has brown potatoes
- 1 cup shredded cheddar cheese
Barbecued Chicken Calzones

Heat oven to 425°F. Lightly spray cookie sheet with cooking spray
- 1 can Pillsbury™ refrigerated classic pizza crust
- 1 1/3 cups refrigerated original barbecue sauce with shredded chicken (from 18-oz container) *****
- 1/2 cup shredded mozzarella or Cheddar cheese (2 oz)
- or shred your own chicken and mix with your favorite bbq sauce.
Upside-Down Cinnamon-Apple Coffee Cake

Heat oven to 350°F. Spray 9-inch glass pie pan with nonstick cooking spray
- 1 1/2 cups chopped peeled apples
- 1 (12.4-oz.) can Pillsbury® Refrigerated Cinnamon Rolls with Icing
- 1/2 cup pecan halves or pieces
- 2 tablespoons margarine or butter, melted
- 1/3 cup firmly packed brown sugar
- 2 tablespoons corn syrup
Chicken Marsala

Spray 4- to 5-quart slow cooker with cooking spray
- 2 cloves garlic, finely chopped
- 1 tablespoon vegetable oil
- 8 boneless skinless chicken breasts
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 jars (6 oz each) Green Giant™ sliced mushrooms, drained
- 1 cup sweet Marsala wine or Progresso™ chicken broth (from 32-oz carton)
- 1/2 cup water
- 1/4 cup cornstarch
- 3 tablespoons chopped fresh parsley
Veal Piccata

In a shallow bowl or plate combine the flour, 1 1/2 teaspoons of the salt and pepper and stir to combine thoroughly
- 1/2 cup all purpose flour
- 2 teaspoons salt
- 1/2 teaspoon freshly ground black pepper
- 4 veal scallops, about 3/4 pound, pounded to a thickness of 1/8-inch
- 1 1/2 tablespoons vegetable oil
- 5 tablespoons butter
- 1 cup dry white wine
- 1/2 cup chicken stock
- 1 garlic clove, chopped
- 1 lemon, juiced, or more to taste, (about 2 tablespoons)
- 2 tablespoon capers, drained
- 1 tablespoon chopped parsley leaves, optional, plus sprigs for garnish
Pork Chops & Stuffing Bake

Prepare the stuffing with the water and butter according to the package directions
- 4 cups Pepperidge Farm® Cornbread Stuffing
- 1 1/4 cups water
- 1/4 cup (1/2 stick) butter
- 1 1/2 pounds boneless pork chop, 3/4-inch thick (about 6 chops)
- 1 can Campbell's® Condensed Cream of Celery Soup or Campbell's® Condensed 98% Fat Free Cream of Celery Soup
- 1/3 cup milk
- 1/2 cup shredded Cheddar cheese
Chicken Cutlets With Tomato Sauté

Season the chicken with ½ teaspoon salt and ¼ teaspoon pepper
- 1 1/2 pounds small chicken cutlets (8 to 12)
- kosher salt and pepper
- 2 tablespoons olive oil
- 1 1/2 pints grape or cherry tomatoes
- 3/4 cup dry white wine (such as Sauvignon Blanc)
- 4 scallions, sliced
- 2 tablespoons fresh tarragon leaves, chopped
CHILI RELLENO CASSEROLE

1.Preheat oven to 350 degrees F (175 degrees C)
- 2 (7 ounce) cans whole green chile peppers, drained
- 8 ounces Monterrey Jack cheese, shredded
- 8 ounces Longhorn or Cheddar cheese, shredded
- 2 eggs, beaten
- 1 (5 ounce) can evaporated milk
- 2 tablespoons all-purpose flour
- 1/2 cup milk
- 1 (8 ounce) can tomato sauce
Cherries Jubilee

In a small dish, combine a little cherry juice with sugar and cornstarch
- 2 (15-ounce) cans whole Bing cherries in juice, drained and reserved
- 1 tablespoon sugar
- 1 tablespoon cornstarch
- 1/4 cup kirsch or cognac, warmed
- 2 pints vanilla ice cream

- 1 (14 ounce) can stewed tomatoes
- 4 (8 ounce) cans tomato sauce

- 1 (14 ounce) can pinto beans
- 1 (14 ounce) can kidney beans
- 1 (10 ounce) can Rotel diced tomatoes
- 1 (1 1/4 ounce) package McCormick mild chili seasoning
- 2 lbs ground chuck
