Appetizer - Fermented Salsa

Add the tomatoes to your food processor and pulse them a few times until they are broken down to the size you like
- 2 – 3 lbs of organic tomatoes of your choice, I used heirloom cherry tomatoes from my garden
- 1 large onion, I have used both red and white, both are delicious choices
- various, chile peppers – quantity and types, your choice. We like spicy so I went with 2 serrano and 1 jalapeño (you can also use bell peppers if you like your salsa mild)
- 3-4 garlic cloves, minced
- 1 bunch of fresh cilantro (If you don’t like cilantro add in oregano, chives, etc)
- Juice of 2 limes, or 1 lime and 1 lemon, or 2 lemons
- 1 1/2 – 2 tablespoons sea salt*
- Dried spices to taste, if you’d like – I added some cumin, chipotle and chile powder
Chicken Spanish Quick Potted

In a small saucepan, bring the ancho chile and 1 cup chicken stock to a boil
- 1 * 1 large dried ancho chile, stemmed and seeded
- 2 3/4 * 2 3/4 cups chicken stock
- 2 * 2 tablespoon butter
- 1 * 1 cup white rice
- 1/4 * 1/4 EVOO – Extra Virgin Olive Oil, divided
- 2 * 2 onions, chopped
- 2 * 2 ribs celery from the heart, chopped
- 2 * 2 bay leaves
- 1 1/2 * 1 1/2 teaspoons ground coriander
- 1 * 1 teaspoon ground cumin
- 1/8 * 1/8 teaspoon ground cinnamon
- * A few pinches ground cloves
- * Salt and pepper
- 1 * 1 28-ounce can diced or whole fire-roasted tomatoes
- 4 * 4 small pieces bone-in chicken breast, halved crosswise
- 4 * 4 small bone-in chicken drumsticks
- 1/2 * 1/2 cup chopped flat-leaf parsley

Preheat the oven to 400 degrees F

- 1/4 cup chopped pecans
- 3/4 cup plus 2 tablespoons packed brown sugar
- 1/2 teaspoon ground cinnamon

- 1/4 cup chopped fresh parsley

Vegetable Pasta Salad

Cook the pasta according to packaging instruction
- 1 # fusilli pasta
- 1 small party tray,cut vegetables:broccoli,cherry tomatoes,celery and carrots
- 3/4 cup vinaigrette-style salad dressing
- salt and pepper to taste
- 1/2 cup almonds, toasted and chopped
Frito Frittata

Position a rack in the center of the oven and preheat it to 400°F
- 1 tablespoon EVOO – Extra Virgin Olive Oil or vegetable oil
- 1/3-pound ham steak, diced (about 1 cup)
- 3 tablespoons butter
- 1 small onion, chopped
- 1/2 small red bell pepper, seeded and finely chopped
- 2 Serrano chile peppers or 1 large jalapeño pepper, thinly sliced
- 2 cloves garlic, finely chopped
- Salt and pepper
- 1 small vine-ripe tomato, seeded and chopped
- 2 tablespoon chopped fresh cilantro or parsley
- 1 1/3 About 1 1/3 cups Fritos corn chips, lightly crushed (about 3 big handfuls)
- 10 eggs, lightly beaten
- 1 tablespoon hot sauce, such as Frank's® RedHot®
- 4 ounces pepper jack, diced (about 1 cup)
Egg - Carbonara Rolls

Preheat oven to 350°F. Melt butter into EVOO in a small pot over medium heat
- 3 tablespoons butter
- 1 tablespoon EVOO – Extra Virgin Olive Oil
- 1 clove garlic, chopped or grated
- 4 white rolls topped with poppy or sesame seeds
- 8 thin slices speck, prosciutto or other deli-sliced ham of your choice
- 3/4 cup grated shredded provolone or white cheddar cheese
- 1/4 cup grated Pecorino
- 4 eggs
- Black pepper
- Optional toppings: parsley tops and frisée or other baby greens dressed with EVOO, lemon juice, salt and pepper

Preheat oven to 425ºF. Working lengthwise, slice off the top quarter of each jalapeño

- 1/3 cup hot sauce, such as Frank's Red Hot
- 2 tablespoons butter
- 2 cups of rotisserie chicken, skin and bones removed, shredded

Start by putting your ribs in a single layer on a baking sheet
- Ribs (pork or beef)
- 2 cups bbq sauce + extra to brush
- 1 cup ketchup
- 3 tablespoons apple cider vinegar (you can substitute white vinegar)
- 1/2 cup brown sugar
- 2 tsp Worcestershire
- dash of hot sauce
- salt and pepper to taste
