Enchilada Suizas and Green Rice

Heat broiler to high. Place poblanos under broiler and char until blackened an all sides, 10-12 minutes
- 2 * 2 large poblano peppers
- 4 * 4 pieces boneless, skinless chicken breast
- 2 * 2 tablespoons EVOO – Extra Virgin Olive Oil
- 1 * 1 onion, chopped
- 2 * 2 jalapeño peppers, seeded and chopped, divided
- 2 * 2 cloves garlic, finely chopped
- * Salt and pepper
- 8 * 8 medium-large tomatillos, peeled, rinsed and chopped
- 3/4 to 1 * 3/4 to 1 cup cilantro, divided
- * Juice of 1 lime
- 2 * 2 teaspoons honey
- 8 * 8 6-inch flour tortillas or 12 5-inch corn tortillas
- 1 * 1 cup crème fraiche or sour cream
- 1 * 1 cup shredded Swiss cheese (buy 1/3 pound block)
- 1 * 1 cup shredded Monterey Jack cheese (buy 1/3 pound block)
- 1 3/4 * 1 3/4 cups chicken stock, divided
- 1 * 1 tablespoon butter
- 1 * 1 cup white rice
- 1 * 1 cup packed fresh spinach leaves
- 3 to 4 * 3 to 4 scallions
Bananas Foster Crêpes

Make the crêpes: Melt the butter in a 10-inch nonstick or stick-resistant skillet over low heat
- For the crêpes:
- 5 tablespoons unsalted butter, divided
- 1 cup whole milk
- 3/4 cup (180 grams) unbleached all-purpose flour
- 2 large eggs
- 1/2 teaspoon table salt
- For the filling:
- 2 under-ripe (slightly green around the edges) bananas
- 3 tablespoons unsalted butter
- 1/3 cup dark brown sugar
- 1/4 teaspoon ground cinnamon
- 1 tablespoon fresh lemon juice
- 1/4 cup dark rum Coffee or vanilla ice cream and chopped toasted walnuts, as accompaniments -
Fish - Buttered Toast Crispy Fishwiches

Pour melted butter over Panko crumbs and work into the crumbs to evenly distribute
- Garnishes:
- 4 tablespoons melted butter, plus some for toast
- 1 1/2 cups Panko crumbs
- 1 tablespoon Old Bay seasoning, a palmful
- 1 tablespoon onion powder, a palmful
- 1 tablespoon garlic powder, a palmful
- Zest of 1 lemon
- A couple of tablespoons thyme, freshly chopped
- A couple of tablespoons chives, finely chopped
- 4 pieces cod filet, 6-ounces each
- Salt and pepper
- 2 egg whites, beaten
- 4 sandwich-size English muffins, toasted and buttered or Breakfast Bread by Thomas' or sliced English Muffin bread, toasted and lightly buttered
- Lemon juice or malt vinegar, oil and vinegar-dressed slaw salad or shredded iceberg lettuce, bread-and-butter pickle slices, finely chopped red onion
Casserole Baked Shells

In a large pot, heat 3 tablespoons EVOO, 3 turns of the pan, over medium heat
- 5 tablespoons EVOO – Extra Virgin Olive Oil, divided
- 6 cloves garlic, finely chopped, divided
- 1 large or 2 small to medium onions, finely chopped, divided
- 1 small carrot, finely chopped or grated
- Salt and pepper
- 1 1/2 teaspoons oregano or marjoram, half a palmful
- 1 teaspoon crushed red pepper flakes, 1/3 palmful
- 1 teaspoon fennel seeds, crushed by pressing under flat of your knife
- 2 tablespoons chopped fresh thyme, 5 to 6 sprigs
- 1/4 cup flat-leaf parsley, finely chopped
- 1/2 cup dry white or red wine
- 2 cups chicken stock
- 2 28-ounce cans Italian crushed tomatoes
- 1 pound medium or large shell pasta (not extra-large stuffing shells)
- 2 boxes frozen chopped spinach, defrosted and wrung dry in clean towel
- Freshly grated nutmeg, about 1/4 teaspoon
- 2 cups fresh ricotta cheese
- 1/2 cup grated Parmigiano-Reggiano cheese, plus some to pass at table
- 2 large egg yolks, lightly beaten
Breakfast - Mexican Breakfast Casserole

Heat oven to 350°F. Spray 13x9x2-inch (3-quart) baking dish with cooking spray
- 1 bag (20 oz) refrigerated cooked shredded hash brown potatoes
- 1 package (1 oz) Old El Paso™ taco seasoning mix
- 1 lb bulk turkey or pork breakfast sausage
- 1 medium onion, chopped (1/2 cup)
- 12 eggs
- 2 cups shredded Cheddar cheese (8 oz)
- 1/4 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon ground pepper
- 1 1/2 cups (from 16-oz jar) Old El Paso™ Thick 'n Chunky medium salsa
Slow Cooker Italian Smothered Steak

Cut beef into 6 serving-size pieces; sprinkle with seasoned salt and pepper
- 2 pounds beef boneless round steak
- 1/2 teaspoon seasoned salt
- 1/4 teaspoon pepper
- 1 medium onion, sliced
- 1 jar (26 ounces) tomato pasta sauce (any variety)
- 1 package (9 ounces) refrigerated cheese-filled tortellini
- 1 medium zucchini, cut lengthwise in half, then cut crosswise into slices (about 1 cup)
Snickerdoodle Muffins

1.Cream the butter and sugar until soft about 3 to 5 minutes
- 2 sticks unsalted butter
- 1 cup sugar
- 2 tsp vanilla
- 2 eggs
- 3/4 tsp baking soda
- 3/4 tsp baking powder
- 3/4 tsp cream of tartar
- 3/4 tsp freshly grated nutmeg
- 1 1/4 cup sour cream
- 2 1/4 cups all purpose flour
- 1/2 cup sugar and 1 TBSP cinnamon mixed together for rolling*
Beef - London Broil

Combine everything except the meat in a large plastic bag
- 3 -5 lbs london broil beef
- 1/4 cup oil
- 1/3 cup vinegar
- 2 onions, diced (or chopped)
- 6 garlic cloves, minced
- 3 tablespoons tamari (soy sauce)
- 3 tablespoons brown sugar
- 1/2 teaspoon pepper
Chicken Prosciutto-Wrapped with Cannellini Beans

- 8 boneless, skinless chicken thighs
- Salt and pepper
- 2 tablespoons rosemary, finely chopped
- 8 slices prosciutto di Parma or speck (smoky ham)
- 3 tablespoons EVOO – Extra Virgin Olive Oil, divided
- 2 ribs celery, finely chopped
- 2 carrots, chopped
- 1 onion, chopped
- 1 small chili pepper, seeded and finely chopped
- 3 to 4 cloves garlic, finely chopped
- 2 tablespoons tomato paste
- 1/2 cup white wine
- 1/2 cup chicken stock
- 2 cups passata or tomato purée
- 1 15-ounce can cannellini beans, drained
- A few leaves of basil, torn
- Crusty bread for mopping
