Tri-tip Sliders With Garlic Provolone Sauce

Ingredients

  • Provolone Sauce:
  • 2 lbs Tri-tip Roast; Cooked, cooled and sliced
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Ground Black Pepper
  • 1 tsp Salt
  • 16 Slider Rolls
  • 4 Tbsp Butter
  • 1 Tbsp Unsalted Butter
  • 1 Tbsp All Purpose Flour
  • 2 cups Whole Milk, heated
  • 1 cup Grated Aged Provolone Cheese
  • 1/4 cup Grated Parmigiano Reggiano
  • 1 tsp Kosher Salt
  • 1 tsp Garlic Powder
  • 1/4 tsp Freshly Ground Black Pepper
  • 2 cups Garlic Provolone Sauce
  • 2 cups Caramelized Onions
  • 4 cups Prepared Beef Au Jus

Preparation

Step 1

Lightly oil cooking grate on grill. Preheat grill and prepare for indirect grilling. Combine garlic powder, onion powder, pepper and salt. Rub over the surface of the roast. Place roast on grill, fat side up. Place a drip pan under roast to catch the drips to add to the au jus later. With the grill on, low cook for about 1 hour, or until it reaches desired temperature.

Oven Option:

Roast at 425 degrees for 45-60 minutes, basting with au jus every 10 minutes. Desired internal temperature is 115-120 degrees. Cook roast and allow to cool overnight, then thin slice against the grain and place in a heat resistant bowl. Heat au jus to a fast simmer. Prepare garlic provolone cheese sauce and caramelized onions, see below. Heat griddle and brown buttered slider roll halves. Pour hot au jus over sliced roast, toss and allow to rest 5 minutes, then toss again. To assemble, place 2-3 thin slices of roast, straight from the au jus onto the bottom slider bun. Top meat with 1-2 teaspoons of caramelized onions. Spread top bun generously with cheese sauce and place on top.

Provolone Sauce:

Melt butter in a medium saucepan over medium heat. Whisk in the flour and cook for 1 minute. Slowly whisk in the warm milk and cook, whisking constantly until thickened, 4-5 minutes. Remove the mixture from the heat and whisk in the provolone and Parmesan until combined, then season with the salt, pepper and garlic.
