Buffalo Chicken Dip

Heat chicken and hot sauce in a skillet over medium heat, until heated through
- 2 (10 ounce) cans chunk chicken, drained
- 2 (8 ounce) packages cream cheese, softened
- 1 cup Ranch dressing
- 3/4 cup pepper sauce (such as Frank's Red Hot®)
- 1 1/2 cups shredded Cheddar cheese
- 1 bunch celery, cleaned and cut into 4 inch pieces
- 1 (8 ounce) box chicken-flavored crackers
Amish Cinnamon Bread

- 1 cup butter, softened
- 2 cups sugar
- 2 eggs
- 2 cups buttermilk or homemade buttermilk - 2 cups milk plus 2 tbsp. vinegar or lemon juice
- 4 cups flour
- 2 tsp. baking soda

- 2/3 cup sugar

SLOW COOKER ENCHILADA ORZO

- 1 (14.5-ounce) can fire roasted diced tomatoes
- 1 (10-ounce) can Old El Paso™ mild enchilada sauce
- 1 (4.5-ounce) can Old El Paso™ chopped green chiles, drained
- 1/2 cup vegetable broth, or more, as needed
- 1 cup corn kernels, frozen, canned or roasted
- 1 cup canned black beans, drained and rinsed
- Kosher salt and freshly ground black pepper, to taste
- 4 ounces cream cheese, cubed
- 2 cups uncooked orzo pasta
- 2 tablespoons chopped fresh cilantro leaves

1. Add ingredients to machine in the order listed
- 1 1/3 cups water (Or 1 Cup Water and 1/3 Cup Flat Beer for better flavor)
- 2 tablespoons olive oil
- 1 teaspoon sugar
- 1 teaspoon honey
- 1 1/4 teaspoons salt
- 2 tablespoons cornmeal
- 3 1/2 cups flour
- 1 teaspoon baking powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/2 teaspoon italian seasoning

Taco Pasta Salad

- 1 lbmedium pasta shells (or other pasta shape)
- 1 (15 oz) canblack beans rinsed and drained
- 2 cups corn, frozen or canned
- 1/2 cupcilantro, finely chopped
- 2 tomatoes, seeded and diced
- 1 1/2 cupssalsa
- 1/3 cupolive oil
- 1/4 cuplime juice
- 2 tablespoons Old El Paso™ taco seasoning
- 2 cloves garlic, minced
- Salt and pepper to taste
- 2 cups shredded Mexican blend cheese
- 3 avocados, diced
BEST BAKED PORK TENDERLOIN

- 1 or 2 1-2 pound pork tenderloins (See note)
- 1 tablespoon oil
- 2-3 tablespoons fresh lemon, lime, or orange juice (or 1 tablespoon of each)
- 2 teaspoons Italian seasoning
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1 teaspoon salt
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika (optional but highly recommended)

- Sauce:
- 1 lb. ground beef
- 1 Tbsp. Olive Oil
- 1 tsp. minced garlic
- 3 1/2 cups shredded cabbage

Loaded Vegetable Soup

- 2 - 3 Tbsp. olive oil
- 4 large carrots, sliced
- 1/2 bunch of celery with leaves, chopped
- 2 medium sized onions, chopped
- 4 large cloves of garlic, minced
- 1 large green pepper
- 1 large red pepper
- 1 small head of broccoli, chopped
- 4 large vine ripened tomatoes, chopped
- 1 cup fresh mushrooms, sliced
- 1 (15 oz.) can Muir Glen Organic Fire Roasted Petite Diced Tomatoes
- 1 (15 oz.) can corn, drained
- 1 1/2 cups fresh or frozen peas
- 1 1/2 cups fresh or frozen fine green beans, cut into bite sized pieces
- 3 potatoes, scrubbed and diced with skin on
- 10 cups of water
- 3 Tbsp. tomato paste
- 3 large bay leaves
- 1/4 cup dried basil (I know that seems like a lot, but it adds so much wonderful flavor to the soup)
- 1 Tbsp. sea salt
- 1/2 tsp. black pepper
- 1/4 tsp. crushed red pepper flakes (optional)

- 1 cup whole wheat pastry flour
- 1/2 cup cocoa powder, unsweetened
- 1-1/2 teaspoon baking powder
- 3/4 cup apple sauce, unsweetened
- 2 medium, ripe bananas, mashed
- 1 cup honey
- 4 egg whites
- 6 ounces unsweetened Baker’s Chocolate (6 squares)
- 1 tablespoon coconut oil
- 1/2 cup walnuts (optional)

Skinny Mexican Rice

In a large skillet or sauce pan add oil, turn to medium-low heat and saute onion until tender, about 4 minutes
- 1 tablespoon extra virgin olive oil
- 2 cloves garlic, minced
- 1 small sweet onion, diced
- 1 cup long grain brown rice (recommend Uncle Ben's Long Grain Brown Rice - not the quick or instant kind)
- 1 teaspoon cumin
- 1/2 teaspoon black pepper
- Kosher or sea salt to taste
- 1/2 cup freshly chopped cilantro
- 1 (14.5 ounce) can petit diced tomatoes
- 1 (4 ounce) can diced green chiles (optional)
- 2 cups vegetable broth, low sodium (optional, chicken broth)
