  • 1 small jalapeno, optional
  • 1/2 teaspoon minced garlic
  • 2 tablespoons olive oil
  • 1 cup regular white rice
  • 3 cups water or chicken broth
  • 1 package (1.12 ounces) fajita seasoning mix
  • 1 and 1/2 cups cheddar cheese
  • Optional toppings: sour cream, chopped cilantro, freshly diced tomato or avocado, lime juice
