Baked Carrot Casserole

- 3 cups sliced carrots
- 12 soda crackers, crushed
- 2 tsp. minced onion
- 2 tbsp. melted butter
- 1/4 tsp. pepper
- 4 tbsp. grated cheese
- (usually double recipe, use real onions & more)
Breakfast Scramble

Put oily browns and veggies in actifry Add oil Cook for 10 minutes Add meat Cook for 5 minutes Add beaten eggs Cook
- 2 cups frozen hash browns
- 1/2 cup fresh veggies (onion, pepper, mushroom)
- 1/3 cup chopped ham, sausage, or bacon
- 4 eggs
- 1/3 cup grated cheese
- 1 tablespoon oil
Bean Salad

- 2 cans bean melody
- 1 can of lentils
- 1 can of chic peas
- 1 can black beans
- 1 can niblet corn
- Rinse and drain really well
- 1 cup celery sliced
- 1 cup of pepper sliced
- 1 cup of red onion
- Add it all together
Coffee Liquer (Based on Instant Coffee)

- 1/4 cup instant coffee
- 2 cups vodka

- 1/2 shredded cup Cracker Barrel Light Cheddar Cheese
- 1/2 tsp. chili powder

- 1/4 cup Kraft Calorie-Wise Zesty Italian Dressing
- 2 onions, chopped
- 1/2 fresh lb. mushrooms, sliced
- 3 Tbsp. minced garlic
- 3 Tbsp. paprika
- 3/4 cup beef broth
- 1 cup frozen peas
- 1/4 cup Miracle Whip Calorie-Wise Spread
- 1 small tomato, chopped

Savory Ham and Rice Dinner

- 1 cup chopped carrot
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 2/3 cup water
- 1 can low-fat cream of celery soup (Campbells makes one, it's called Healthy Request) or 1 can reduced-fat cream of broccoli soup (used mushroom)
- 3/4 cup Minute Rice (used basmati)
- 1 1/2 cups cubed cooked ham
- 1 teaspoon poultry seasoning

Apple Crumb Pie

Preheat oven to 375 degrees F (190 degrees C)
- 1 (9 inch) pie shell
- 6 cups thinly sliced apples
- 1 tablespoon lemon juice (optional)
- 3/4 cup white sugar
- 2 tablespoons all-purpose flour
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 1/2 cup raisins (optional)
- 1/2 cup chopped walnuts (optional)
- 1/2 cup all-purpose flour
- 1/2 cup packed brown sugar
- 3 tablespoons butter
