Cowboy Chicken Chili Casserole

Heat oil over medium high heat in a large pot
- 1 lb (0.5 kg) extra lean ground chicken
- 2 tsp (10 mL) grapeseed oil
- 1 tbsp (15 mL) onion powder
- 2 tsp (10 mL) garlic powder
- 1 tbsp (15 mL) cumin, ground
- 1 tbsp (15 mL) oregano, fresh

- 1/2 tsp (2.5 mL) oregano, dried
- 1 tbsp (15 mL) chili powder
- +
- 1/2 tsp (2.5 mL) chilli powder
- 14 fl oz beans in tomato sauce, canned
- 1 cup (250 mL) salsa, ready to serve
- 5.5 fl oz tomato paste
- 1 cup (250 mL) water
- 3 potatoes, medium, skin on and sliced
- 2 cups (500 mL) mozzarella cheese, part skim, 16.5% MF
- vegetable cooking spray

Heat oven to 350 Degrees Unroll dough and press in bottom and 1/2 inch up sides of a 9 x 13 pan

In a large bowl, stir together the oats, flour, baking soda, baking powder, salt, and cinnamon
- Add some variety to your cookie jar by replacing the walnuts and chips with different mix-in combinations:
- 2 cups old-fashioned rolled oats
- 2 cups flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/8 teaspoon cinnamon
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup packed light brown sugar
- 2/3 cup granulated sugar
- 2 eggs, at room temperature
- 1 teaspoon vanilla extract
- 2 cups semisweet chocolate chips
- 1 cup chopped walnuts
- Customizing Cowboy Cookies
- Coconut Cowboy Cookies: 1 cup of flaked sweetened coconut, 2 cups of chocolate chips, and 1 cup of chopped walnuts.
- Cranberry White Chocolate Cowboy Cookies: 1 cup each of white chocolate chips and dried, sweetened cranberries.
- Peanut Butter Cowboy Cookies: 2 cups of peanut butter chips or 1 cup each of peanut butter chips and chocolate chips.

- 1 (10 fl oz/284 mL) can condensed cream of chicken soup
- 1 cup sour cream, divided
- 4 chopped cooked cups chicken
- 3 cups frozen mixed vegetables (carrots, corn, green beans, peas), thawed

- 1/2 cup (1 stick, 4 ounces, or 115 grams) butter, softened
- 2/3 cup (125 grams) light brown sugar, packed
- 1 large egg
- 1/2 teaspoon vanilla extract
- 3/4 cup (95 grams) all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon table salt (I often use a half teaspoon, but I like more salt in my baked goods)
- 1 1/2 cups (120 grams) rolled oats
- 3/4 cup (120 grams) raisins
- 1/2 cup walnuts (65 grams), chopped (optional)
