Chinese Chicken Fried Rice

Easy, quick & tasty, great basic recipe to add your taste & influence!
- 1 egg
- 1 tablespoon water
- 1 tablespoon butter
- 1 tablespoon vegetable oil
- 1 onion, chopped
- 2 cups cooked white rice, cold
- 2 tablespoons soy sauce
- 1 teaspoon ground black pepper
- 1 cup cooked, chopped chicken meat
Traditional Beef Stew

This is a very basic beef stew
- 3 lbs boneless chuck roast, cut into 2-inch pieces
- 3 tbsp vegetable oil
- 2 tsp salt
- 1 tbsp freshly ground pepper
- 2 yellow onions, cut into 1-inch chunks
- 1/4 cup flour
- 3 cloves garlic, minced
- 1 cup red wine
- 3 cups beef broth
- 1/2 tsp dried rosemary
- 1 bay leaf
- 1/2 tsp dried thyme
- 4 carrots, peeled, cut into 1-inch slices
- 2 stalks celery, cut into 1-inch slices
- 3 large russet potatoes, peeled and cut in eighths
- fresh parsley to garnish (optional)
Beef & Mushroom Braised Stew Recipe

Preheat oven to 325°. Sprinkle beef with salt and pepper
- 1 boneless beef chuck roast (2 to 3 pounds), cut into 1-inch cubes
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 3 tablespoons olive oil
- 1 pound sliced fresh mushrooms
- 2 medium onions, sliced
- 2 garlic cloves, minced
- 1 carton (32 ounces) beef broth
- 1 cup dry red wine or additional beef broth
- 1/2 cup brandy
- 1 tablespoon tomato paste
- 1/4 teaspoon each dried parsley flakes, rosemary, sage leaves, tarragon and thyme
- 3 tablespoons all-purpose flour
- 3 tablespoons water
- Hot mashed potatoes
Country Apple Dumplings

Who knew that fresh apples, crescent roll dough, and citrus soda could make such a wonderful treat!
- 2 large Granny Smith apples, peeled and cored
- 2 (10 ounce) cans refrigerated crescent roll dough
- 1 cup butter
- 1 1/4 cups white sugar
- 1 teaspoon ground cinnamon
- 1 (12 fluid ounce) can or bottle Mountain Dew soda
Asian Vegetable-Beef Soup

In a large saucepan, brown meat in oil on all sides; drain
- 1 pound beef stew meat, cut into 1-inch cubes
- 1 tablespoon canola oil
- 2 cups water
- 1 cup beef broth
- 1/4 cup sherry or additional beef broth
- 1/4 cup reduced-sodium soy sauce
- 6 green onions, chopped
- 3 tablespoons brown sugar
- 2 garlic cloves, minced
- 1 tablespoon minced fresh gingerroot
- 2 teaspoons sesame oil
- 1/4 teaspoon cayenne pepper
- 1-1/2 cups sliced fresh mushrooms
- 1-1/2 cups julienned carrots
- 1 cup sliced bok choy
- 1-1/2 cups uncooked long grain rice
- Chive blossoms, optional
Spice-Rubbed Grilled Pork Chops

Be careful with the temp or they will dry out!
- 3 tablespoons sweet paprika, preferably Spanish
- 1 tablespoon freshly ground black pepper
- 1 tablespoon coarse salt, either kosher or sea salt (I use smoked sea salt)
- 3/4 teaspoon sugar
- 3/4 teaspoon chili powder
- 3/4 teaspoon granulated garlic or garlic powder
- 3/4 teaspoon onion powder
- 1/4 to 1/2 teaspoon ground cayenne
- Six to eight 10- to 11-ounce bone-in pork rib chops, 3/4 to 1 inch thick
- Vegetable oil spray
Decadently Delicious Mac & Cheese

Cook macaroni according to directions on box
- 3 cups uncooked shell macaroni
- 1/2 cup onion, diced
- 4 pieces of bacon, diced
- 1/2 cup butter
- 1/2 cup flour
- 1 and 1/2 cups milk
- 1 cup sour cream
- 8 ounces Velveeta cheese
- 1/2 cup grated Romano cheese
- 2 cups shredded cheddar
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon dry ground mustard
- 1/4 teaspoon cayenne pepper
- 1 cup diced cooked ham
- 2 cups frozen peas, rinsed in warm water and drained

Melt butter in a large saucepan
- 2 tablespoons butter
- 1/4 cup All-Purpose Flour
- 2-1/2 cups chicken broth
- 1 teaspoon dried coriander
- 1 can (4 ounces) chopped green chilies, divided
- 2 cups cubed cooked chicken
- 1 cup (4 ounces) shredded Monterey Jack cheese
- 8 flour tortillas (8 inches), warmed
- 1 cup (4 ounces) shredded cheddar cheese
Cherry Tomato Vinaigrette

- 1 pint cherry tomatoes
- 3 tablespoons olive oil, divided
- 1 shallot, finely chopped
- 1 tablespoon (or more) red wine vinegar
- Kosher salt, freshly ground pepper
