Homemade Chili

Toast chili powder, cumin and black pepper in pan until fragrant
- 2 T chili powder
- 1/2 t ground cumin
- 1/2 t ground black pepper
- 1 T. olive oil
- 1 small onion, chopped
- 1 clove garlic, minced
- 1/2 green bell pepper, chopped
- 1 lb ground beef
- 1 can (16 oz) kidney beans, drained and rinsed
- 1 can (14-1/2 oz) diced tomatoes
- 6 oz can tomato juice
- salt to taste

Easy Beef Enchiladas

1. Preheat oven to 350 degrees F
- 1 pound lean ground beef
- 1 1/2 cups diced onion
- 1 1/2 cups (about 2 medium) finely diced zucchini
- 12 corn tortillas, heated or fried in oil to soften
- 2 1/2 cups enchilada sauce, canned or homemade
- 3 cups cheddar- jack shredded cheese
Asparagus Frittata

Preheat oven to 450 degrees Cut asparagus stalks into 1 inch pieces; you should have about 3 cups
- 3/4 pound asparagus, trimmed
- salt and pepper to taste
- 2 1/2 T olive oil
- 1 1/4 cups (4 oz.) sliced fresh mushrooms
- 3 scallions, sliced
- 6 eggs, lightly beaten
- 3 T milk
- 1 T chopped fresh Italian parsley
- 1 T chopped fresh basil
- 1/2 tsp. chopped fresh thyme
- 1 T butter
- 1/4 cup freshly grated Parmesan cheese
- 1/4 cup shredded Fontina or Mozzarella cheese
- 2 T crunchy bread crumbs (or crush French bread crusts)

Heat oven to 375 degrees. Grease and flour a sqare pan 9" X 9" X 1-3/4" Mix sugar, butter and egg thoroughly
- 3/4 cup sugar
- 1/4 cup soft butter
- 1 egg
- 1/2 cup milk
- 1-1/2 cups flour
- 2 t. baking powder
- 1/2 t. salt
- Streusel Mixture
- Mix 1/2 cup brown sugar (packed), 2T. flour, 2t. cinnamon, 2T. butter and 1/2 cup chopped nuts
Best-ever potato soup

In a large saucepan, cook bacon until crisp; drain
- 6 bacon strips, diced
- 3 cups cubed peeled potatoes
- 1 can (14-1/2 ounces) chicken broth
- 1 small carrot, grated
- 1/2 cup chopped onion
- 1 tablespoon dried parsley flakes
- 1/2 teaspoon each celery seed, salt and pepper
- 3 tablespoons all-purpose flour
- 3 cups milk
- 8 ounces process cheese (Velveeta), cubed
- 2 green onions, thinly sliced, optional
Zucchini Bread with Chocolate Chips

1.Preheat oven to 350°F. Coat a 9-by-5-inch loaf pan with cooking spray
- 3/4 cup low-fat milk
- 2 large eggs
- 3/4 cup sugar
- 1/3 cup canola oil
- 1 teaspoon vanilla extract
- 2 cups shredded zucchini (about 2 small zucchini)
- 2 cups white whole-wheat flour (see Note)

- 2/3 to 3/4 cup brown sugar, packed
- 1/2 cup flour
- 1/2 cup rolled oats
- 1 t cinnamon
- 1/3 cup soft butter
Zucchini Muffins

- 1 1/2 cups all-purpose flour
- 3/4 cup sugar
- 2 tsp. baking powder
- 1/4 tsp. baking soda
- 1/4 tsp. salt
- 1/2 tsp. ground cinnamon
- 2 eggs
- 1/3 cup canola oil or almond oil
- 1/4 cup orange marmalade
- 1 tsp. vanilla extract
- 1 zucchini, 4 oz. total, shredded and drained on
- paper towels
- 3/4 cup dark raisins or dried sweet cherries
- 1/4 cup pecans or almonds, chopped
- Butter for serving
Cauliflower soup

In a large bowl, combine the cauliflower, carrot, celery, water and bouillon
- 1 medium head cauliflower, broken into florets
- 1 medium carrot, shredded
- 1/4 cup chopped celery
- 2-1/2 cups water
- 2 teaspoons chicken or 1 vegetable bouillon cube
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 3/4 teaspoon salt
- 1/8 teaspoon pepper
- 2 cups milk
- 1 cup (4 ounces) shredded cheddar cheese
- 1/2 to 1 teaspoon hot pepper sauce, optional
