- 1/4 cup vegetable or canola oil
- 2 Tablespoons all-purpose flour
- 2 Tablespoons chili powder
- 1 (8 ounce) can tomato sauce
- 1 1/2 cups low-sodium chicken broth
- 1/2 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion salt
- 1/4 teaspoon salt
Home Baked Granola

Preheat oven to 250 degrees
- 3-1/2 cups Rolled Oats
- 1 cup sliced, slivered or chopped almonds
- 1 cup raw cashews, coarsely chopped
- 1/3 cup packed brown sugar
- 1 teaspoon cinnamon
- 1/3 cup real maple syrup
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
- 1/4 to 1/2 teaspoon salt
- 3/4 to 1 cup raisins
Sicilian Zucchini Pizza

Sicilian pizza, or Sfincione, is known for its thick crust, which can be 1 inch thick or more
- 1/2 red onion, peeled and cut into 4 wedges
- 2 Tbs. olive oil, plus more for drizzling
- Salt and freshly ground pepper, to taste
- 4 zucchini, cut lengthwise into slices 1/4 inch thick
- 1/2 batch Sicilian-style pizza dough
- Cornmeal for dusting
- 1 cup tomato sauce
- 2 cups grated provolone cheese
- 1 cup grape tomatoes, halved
- Grated Parmigiano-Reggiano cheese for sprinkling
- 2 Tbs. thinly sliced fresh basil
Salmon with lemon-cilantro vinagrette

Cook the couscous according to package directions
- 1 10 oz box couscous (1-1/2 cups)
- 3 T olive oil
- 1 1-1/4 lb salmon fillet cut into 4 portions
- 1/2 t paprika, kosher salt & pepper
- 1/2 cup fresh cilantro, chopped
- 4 scallions, thinly sliced
- 2 T fresh lemon juice
Turkey Loaf

Pour into greased casserole dish and bake at 350 degrees for 1 to 1-1/2 hrs
- Beat together:
- 3 eggs
- 2 cups milk
- dash salt
- 1 t. parsley flakes
- Add:
- 3 cups cooked rice
- Cubed turkey

- 1/4 cup sugar
- 2 tablespoons unsalted butter
- 4 ounces bittersweet chocolate, roughly chopped
- 3 tablespoons dutch process cocoa
- 3 large eggs, separated
- 1 cup whole milk
- 1/4 teaspoon salt
Blackberry-Banana Slim-down Smoothie

- 1 cup Bob's Red Mill 5 grain rolled hot cereal
- 1 1/2 cups old fashioned rolled oats
- 1/2 cups dried cherries, currants, or dates
- 1/2 cup hazelnuts
- 1/4 cup pumpkin seeds
- 1/2 teaspoon flax seeds
- 1/2 teaspoon chia seeds
- 1/4 teaspoon cinnamon
- yogurt or kefir and honey to serve
Chicken and Dumplings

In large saucepan or dutch oven, place all ingredients except Bisquick and dumpling dough
- 3-3 1/2 lb. stewing chicken
- 4 celery stalk tops
- 1 medium carrot, cut in 1/2 inch slices
- 1 small onion, sliced
- 2 sprigs parsley
- 2 t. salt
- 1/8 t. pepper
- 5 cups water
- 1/2 cup New Bisquick
- Dumpling dough
- 2 cups Bisquick
- 2/3 cup milk
- 1/2 t. parsley flakes
- 1/4 t. poultry seasoning
