Preheat oven to 375°. Heat oil in a large nonstick skillet over medium-high heat
- 1 tablespoon olive oil
- 1 cup finely chopped onion
- 1/4 teaspoon crushed red pepper
- 2 garlic cloves, minced
- 2 cups (1/2-inch) cubed peeled butternut squash
- 1 cup chopped parsnip
- 1 tablespoon chopped fresh or 1 teaspoon dried rubbed sage

- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice
- 1/2 teaspoon salt, divided
- 1/2 teaspoon black pepper, divided
- 2 cups uncooked penne pasta
- 1/2 cup (2 ounces) grated fresh Parmesan cheese, divided
- Cooking spray
- 1 1/2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup 1% low-fat milk
Zucchini-Pineapple Quick Bread

- 3 cups sifted all-purpose flour (about 13 1/2 ounces)
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 1/2 teaspoons ground cinnamon
- 2 large eggs
- 2 cups sugar
- 2 cups grated zucchini (about 1 1/2 medium zucchini)
- 2/3 cup canola oil
- 1/2 cup egg substitute
- 2 teaspoons vanilla extract
- 2 (8-ounce) cans crushed pineapple in juice, drained

- For the Mango Salsa:
- 4 chicken breasts
- 1/4 cup soy sauce
- 1/4 cup honey
- 3 Tablespoons vegetable oil
- 3 Tablespoons fresh lime juice (about 1-2 limes)
- 3 garlic cloves, crushed
- 1 jalapeno, halved & seeded
- 4 buns
- 1 avocado, sliced, optional
- Red onion slices, optional
- Lettuce, optional
- Jalapeno slices, optional
- 2 mangoes, chopped small
- 1 jalapeno, seeded & minced
- 2 green onions, sliced
- 1/4 cup chopped cilantro
- juice of 1 lime
- salt & pepper
Croque Monsieur Sandwich Pockets

Preheat oven to 425. In a mixing bowl combine shredded cheese, chopped ham, mustard, nutmeg, and cayenne
- 2 cups shredded gruyere cheese (8 oz)
- 9 oz deli ham (I used Oscar Meyer Black Forest Ham), chopped into small pieces
- 1 1/2 tablespoons dijon mustard
- 1/4 teaspoon nutmeg
- 1/8 teaspoon cayenne pepper
- 2 tubes refrigerated French bread dough (Pillsbury Simply French Bread or Pillsbury Crusty French Bread)
- 1 large egg
- 1 tablespoon water

1. Heat oven to 350°F. Spray cookie sheet with cooking spray
- 1 can (8 oz) Pillsbury™ refrigerated crescent dinner rolls or 1 can (8 oz) Pillsbury™ refrigerated Crescent Dough Sheet
- 1 package (3 oz) cream cheese, softened
- 1 1/2 teaspoons Old El Paso™ taco seasoning mix (from 1-oz package)
- 1/3 cup finely shredded Cheddar cheese
- 1/4 cup Green Giant™ SteamCrisp® Mexicorn® whole kernel corn with red and green peppers (from 11-oz can), drained
- 2 tablespoons finely chopped green onions (2 medium)

Preheat oven to 350˚F and spray two medium loaf pans with nonstick cooking spray
- 3 cups all-purpose flour
- 1 tsp ground cloves
- 2 tsp ground cinnamon
- 1 tsp ground nutmeg
- 1/2 tsp salt
- 1 tsp baking soda
- 1/2 tsp baking powder
- 3 cups granulated sugar
- 1 cup butter, really soft, half melted really
- 3 large eggs
- 1 16 oz can of pure pumpkin
- 1/2 cup chopped pecans (optional)
