Ingredients
- 1/2 tsp salt
- 1 tbsp dried oregano
- 1 tbsp olive oil
- 3 lbs boneless pork
- 1/4 tsp black pepper

Step 1
Put the oven rack in the center of the oven and preheat to 450 degrees.
In a small dish combine olive oil, salt, oregano and pepper. Rub this mixture all over the pork.
Place the roast on a rack in a roasting pan, fat side up, and put the roast into the oven.
Roast for 10 minutes, then lower the temperature to 250 degrees.
Continue cooking for about 50-80 minutes or until the meat registers 150 degrees on a meat thermometer.
Remove the roast from the oven and set on a cutting board. Cover the meat with foil and let it rest for about 15 minutes before slicing.
