Maple Roasted Sweet Potatoes
- 1 lb sweet potatoes, peeled and cubed
- 1 tbsp butter, melted
- Kosher salt and finely ground black pepper
- 1 tsp orange juice
- 1 tbsp pure maple syrup
1. Preheat oven to 400.
2. Arrange sweet potatoes in an even layer in a 9x13 baking dish. Combine butter, orange juice, maple syrup, salt and pepper in a small bowl and pour over potatoes. Toss to coat.
3. Cover and bake sweet potatoes for 15 minutes. Uncover, stir and cook, stirring every 15 minutes, until tender and starting to brown, 45-50 minutes more.
