Macaroni and Cheese

1. Cook macaroni in boiling salt water till tender, then drain
- 1 1/2 cup elbow macaroni
- 3 TBS all-purpose flour
- 1/4 tsp. pepper
- 3 TBS butter
- 2 cups milk
- 1/2 tsp salt
- 2 1.2 cup shredded cheese
Herbed Cornmeal Crab Cakes

In a shallow bowl, combine the first six ingredients, set aside
- 2 TBS cornmeal
- 2 TBS dry bread crumbs
- 1 TBS flour
- 1/4 tsp. garlic powder
- 1/8 tsp. onion powder
- 1/8 tsp. salt
- 1 egg, beaten
- 1/4 cup dry bread crumbs
- 2 TBS minced chives
- 1 TBS minced fresh parsley
- 1 1/2 tsp. minced fresh thyme
- 1 TBS mayonnaise
- 1 TBS tartar sauce
- 2 tsp. spicy brown mustard
- 1/2 tsp. lemon juice
- 1/2 tsp. worcestershire sauce
- 1/4 tsp. celery salt
- 1 can (6 oz.) crabmeat, drained, flaked and cartilage removed
- 2 TBS canola oil
Angel Food Waldorf Cake

Bake angel food cake as directed
- 1 angel food cake mix
- 3 cups whipping cream
- 1 1/2 cup powdered sugar
- 3/4 cup cocoa
- 1/4 tsp salt
- 2/3 cup slivered almonds
STUFFED PEPPERS

Remove insides of peppers
- 6 green bell peppers
- 1 lb ground beef
- 1 cup Minute Rice
- 1 medium onion, chopped
- 1 stalk celery, chopped
- 1 egg
- 1/2 cup bread crumbs
- 1 8 oz. can tomato sauce
- salt and pepper
Cheesy Garlic Bread

Preheat oven to 375 degrees
- 1 medium loaf French bread, unsliced
- 1/2 cup margarine or butter, softened
- 2 clove garlic, halved
- 1 tsp dried parsley
- 1/3 cup grated Parmesan cheese
Garlic Salmon Linguine

Cook the linguine according to package directions
- 1 pkg (16 oz ) linguine
- 3 garlic cloves, minced
- 1/3 cup olive oil
- 1 can (14 3/4 oz) salmon, drained, bones and skin removed
- 3/4 cup chicken broth
- 1/4 cup fresh parsley
- 1/2 tsp salt
- 1/8 tsp cayenne pepper
Colorful Corn Salad

In large bowl, combine the first 12 ingredients
- 2 pkg ( 10 ounces each) frozen corn, thawed
- 2 cups diced green pepper
- 2 cups sliced sweet red pepper
- 2 cups diced celery
- 1 cup minced fresh parsley
- 1 cups chopped green onion
- 1/2 cup shredded Parmesan cheese
- 2 tsp ground cumin
- 1 1/2 tsp salt
- 3/4 tsp pepper
- 1/2 tsp hot pepper sauce
- 1/8 cayenne pepper
- 3 tbs olive oil
- 2 garlic cloves, minced
- 6 tbs. lime juice

- 1 46 oz can of unsweetened pineapple juice

Melt shortening; remove from heat and blend in brown sugar; cool
- 1/4 cup shortening
- 1 cup brown sugar
- 1 egg
- 3/4 cup flour
- Chocolate chips or peanut butter chips (optional)
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp vanilla
- 1/2 cup chopped pecans

- 1/2 cup flour
- 1 tsp salt
- 1/2 tsp pepper
- 10 chicken thighs (about 3 pounds)
- 3 tbs vegetable oil
- 1 cup uncooked long grain rice
- 1/4 cup chopped onion
- 2 garlic cloves, minced
- 1 can (4 oz) mushroom stems and pieces, undrained
- 2 chicken bouillon cubes
- 2 cups boiling water
- Minced fresh parsley, optional
