Chicken Chowder

Melt butter in stock pot. Add onion, celery and green pepper and cook until tender
- 1/4 c. butter
- 1 chopped onion
- 1 med carrot, diced
- 1/2 gr. pepper, chopped
- 1/4 c. flour
- Salt & pepper to taste
- 1 c. boiling chicken broth
- 1 28oz can diced tomatoes
- 1 apple, chopped
- 1 tsp basil
- 1/4 c. chopped parsley
- 3 c. milk
- 1 c. diced cooked chicken
Grilled Salmon

- salmon fillets
- with salt and pepper or your desired dry seasoning
Microwave Acorn Squash Recipe

Cut squash in half; discard seeds
- 2 medium acorn squash
- 1/4 cup packed brown sugar
- 2 tablespoons butter
- 4 teaspoons honey
- Salt & pepper to taste
Skillet Ck Supper

Mix flour, garlic & pepper in plastic bag
- 1/2 cup flour
- 1/2 t. garlic powder & pepper
- Chicken tights 10-12 pieces
- 1/2 cup soy sauce
- 1/2 t. dried oregano
- 3 med potatoes, cut in 1”cubes
- 3 lg carrots in 1” pieces
- 3 celery ribs in 1”pieces
- 10 oz peas
Garlic Mashed Potatoes

Place potatoes and garlic in a medium saucepan and pour over enough water to cover
- 1 1/4 pounds Yukon gold potatoes, unpeeled and cut into 1-inch pieces
- 4 peeled garlic cloves
- 1/2 cup sour cream
- 2 tablespoons freshly chopped parsley leaves
- Salt and freshly ground black pepper
Mozzarella & Mushroom Salad

- Kosher salt
- 5 medium vine-ripened tomatoes
- 1/4 cup extra-virgin olive oil,
- plus more for drizzling
- 1/2 clove garlic, chopped
- 1 teaspoon chopped jalapeno pepper
- Freshly ground pepper
- 1/4 cup chopped pine nuts,
- plus more for topping
- 1/4 cup chopped fresh basil
- 1 teaspoon chopped fresh oregano
Cabbage Sausage Dinner

Cut cabbage into 1-2 inch wedges
- 1 med head of cabbage
- 6-8 med potatoes
- 2 lbs smoked sausage

Roasted Butternut Squash Soup

Heat the oven to 425°F. Line a baking sheet with aluminum foil
- 2 lb butternut squash, halved and seeded
- 2 tbs butter
- 1 apple, peeled, cored and chopped
- 1/4 chopped onion
- 1/2 tsp sage leaves
- 1 1/4 c. chicken broth
- 1 1/4 c. water
- Salt and pepper to taste
- 1/3 c. cream
