Chicken Pot Pie

Prepare filling: Saute onion, celery, and garlic 2 minutes
- Filling:
- 1 onion, chopped
- 1 stalk celery, chopped
- 1 clove minced garlic
- 1 tab olive oil
- 1 lb potatoes, peeled, quartered
- 4 carrots, peeled, cut into 1/2 inch slices
- 4 c. chicken broth
- 1 lb 1/2 inch chicken pieces
- 1 10 oz pkg frozen peas
- 1 10 oz pkg frozen corn
- 1 cup milk
- 1/3 cup flour
- 1/4 c. grated Parmesan cheese (opt)
- salt and pepper to taste
- Biscuit topping:
- 1/4 c. chopped onion
- 2 tbs butter
- 1 c. all purpose flour
- 1 c. whole wheat flour
- 1/4 tsp baking soda
- 2 tsp baking powder
- 1 tsp salt
- 1/3 c. shortening
- 3/4 c. buttermilk
Waldorf Salad

Combine apples, celery, walnuts and raisins
- 2 med apples, unpeeled chopped
- 2 ribs celery, chopped
- 1/4 c. walnuts, broken
- 1/4 c. raisins
- 1/4 c. mayonnaise
- 1/4 c. plain yogurt
- 1 1/2 tsp honey
- 1 1/2 tsp lemon juice
Taco Sauce

Mix all together in a blener until smooth
- 8 ounce tomato sauce
- 1/4 cup water
- 1/4 teaspoon chili powder (more if you want this hotter)
- 1 teaspoon cumin
- 1 tablespoon of onion, chopped
- 1 tablespoon white vinegar
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon paprika
- 1/4 teaspoon sugar
- 1/4 teaspoon ground red pepper
Carrot Combo Salad

Combine first 5 ingredients
- 2 c. grated carrots
- 1 rib celery sliced
- 1/4 c. raisins
- 1 sm apple, grated or chopped
- 1/2 c. crushed pineapple
- 1/4 c. mayo
- 1/4 c. plain yogurt
- 1 1/2 tsp honey
- 1 1/2 tsp lemon juice
Bass with Tomatoes & Corn

In a large skillet, heat oil over medium-high
- 2 tbs olive oil
- 4 – 5oz bass fillets
- Salt & pepper
- 1 chopped onion
- 2 minced garlic cloves
- 1/2 c. chicken broth
- 2 ears of corn, husks and silk removed, kernels scraped off
- 6 oz cherry tomatoes, quartered
- 1/2 c. chopped basil
- 1/4 c. chopped cilantro
Okra and Tomatoes

- 2 tbs oil
- 1/2 onion, chopped
- 1/2 gr. pepper,chopped
- 3 garlic cloves, minced
- 1 tbs tomato paste
- 2 tbs red wine vinegar
- 1 1/2 c. chicken broth
- 1 tsp minced fresh basil
- 1/2 to 3/4 pound fresh okra
- 1 16oz can diced tomatoes
- Salt and pepper
Peanut Chicken

If you don’t want to use peanut butter, sub any nut or seed butter you like
- In a deep pie dish, combine:
- 6 Tbsp peanut butter
- 2 Tbsp honey
- 1/4 cup lemon juice
- 2 Tbsp olive oil
- 1/2 tsp ginger
- 2 Tbsp Worcestershire sauce
- 1/2 tsp salt
Sweet and Sour Chicken Kabobs

Put the vinegar, sugar, reserved pineapple juice and cornstarch slurry into a small saucepan
- 1/2 cup apple cider vinegar
- 1/4 cup brown sugar
- 1/2 (20-ounce) can pineapple chunks, juice reserved
- 1 tablespoon cornstarch, mixed with 1 tablespoon water
- 1 red pepper, cut into 1-inch pieces
- 1 lb boneless skinless chicken boneless thighs about four thighs
- Kosher salt and freshly ground black pepper
- 8 bamboo skewers, soaked in water for 30 minutes
Sw. Potatoes Stuffed with Black Bean & Corn Salad

In a bowl, add the black beans, corn, onions, and cilantro
- For the Vinaigrette:
- 4 small sweet potatoes baked
- 1 (15 oz) can black beans, rinsed and drained
- 1 cup corn fresh or frozen
- 3 green onions, thinly sliced
- 1/2 c. cilantro, chopped
- 2 tbs limes juice
- 1 tbs oil
- 2 tsp honey
- Pinch salt & pepper
Scones

- 3/4 teaspoon salt
- 1/3 cup sugar
- 4 tablespoons butter
- 2 tablespoons shortening
- 3/4 cup cream
- 1 egg
- Handful dried currants or dried cranberries
