Pot Luck Pork

Place pork chops in the bottom of crock pot then put the rest of the ingredients on top
- 6 pork chops
- 1 lb bag of baby carrots
- 3 stalks celery, sliced
- 6 potatoes, cubed
- 1 c. frozen peas
- 2 c. chicken broth
- 1 tsp coriander
- 2 tsp basil
- 1 tsp salt
- Pepper to taste
- 1 clove garlic, minced
- 1 tsp Montreal chicken spice
- 3 c. water
Gingered Tilapia & Swiss Chard

Sprinkle fish with ¾ tablespoon of ginger, salt and pepper
- 4 tilapia fillets
- 1 1/2 tbs grated fresh ginger
- Salt & pepper
- 1 1/2 tbs oil
- 1 chopped onion
- 2 bunches Swiss chard (6 cups)
- 1/2 c. chicken broth
Honey Mustard Salmon

Pre heat the oven to 400 degrees
- 1 tbs butter
- 1 tbs br. sugar
- 2 tbs Dijon mustard
- 1 tbs honey
- 1 tbs soy sauce
- 1/2 tbs olive oil
- Salt & pepper
- 4 salmon fillets
Baked Sweet Potato

Heat oven to 400° F. Pierce each sweet potato several times with the tines of a fork
- 4 med sweet potatoes
- 3 tbs sugar
- 1 1/2 tsp cinnamon
- 4 tbs butter
Fried Shrimp

Rinse and peel fresh shrimp, leaving tails on
- 16 lg or jumbo shrimp
- Canola oil, for frying
- 1 c flour
- 1 tbs salt
- Pepper, as desired
- 2 eggs
- 1-2 c. Panko bread crumbs
- Lemon wedges, for garnish
- Parsley, for garnish
Eclair Cake

Directions In a medium bowl, thoroughly blend the pudding mix, whipped topping, and milk
- 2 (3.5 ounce) packages instant vanilla pudding mix
- 1 (8 ounce) container frozen whipped topping, thawed
- 3 cups milk
- 1 (16 ounce) package graham cracker squares
- 1 (16 ounce) package prepared chocolate frosting
Julienne Vegetables

Cut squash, celery, and carrots into 3 by ¼ inch strips
- 3 med yellow squash
- 3 stalks celery
- 2 med carrots
- 1 bunch broccoli flowerets
- 1 tbs oil
- 1/2 tsp dried basil
- Salt & pepper to taste
- Garlic powder to taste
- 1 tbs Minced fresh parsley
Tilapia with Walnuts & Oregano

In a large skillet, heat oil
- 1 tbs oil
- 1 lg shallot, minced
- 4 tilapia fillets
- Salt & pepper to taste
- 1/2 c. finely chopped walnuts
- 2 gr. onions
- 1/2 tsp dried oregano
Zucchini Provencal

Directions In a skillet, saute onion in oil until tender
- 1 small onion, chopped
- 1 clove garlic, minced
- 2 tbs olive oil
- 1 lg potato, cubed
- 1/2 c. chicken broth
- 2 med zucchini, cubed
- 1/3 c. diced green pepper
- 1/2 c. chopped celery
- 1 tsp basil
- salt and pepper
- 2 med tomatoes, cut in chunks
- 1 tbs snipped fresh parsley
Pie Crust

Put the butter, flour, and salt in the food processor, and pulse lightly just until the mixture resembles wet sand
- 1 cup butter (2 sticks), cubed and chilled
- 2 1/4 cups all-purpose flour
- 1 teaspoon salt
- 8 to 10 tablespoons ice water
