Oven Roasted Corn on the Cob

Preheat oven to 350°F. Rinse ears
- 4-6 ears of corn, if fresh in husks, or as many as desired

For sauce: Heat oil in a skillet over medium-high heat
- Enchilada Sauce:
- 3/4 lb boned, skinned smoked salmon
- 1/2 c. cream cheese (4oz)
- 1 c. enchilada sauce (recipe below)
- 1/4 c. chicken broth
- 8 corn tortillas (6")
- 3/4 c. chopped green onions (including tops)
- 1/2 c. shredded jack cheese
- 1/8 c. vegetable oil
- 1 tbs self-rising flour
- 1/8 c. chili powder
- 4 oz can tomato sauce
- 3/4 cups water
- 1/8 tsp ground cumin
- 1/8 tsp garlic powder
- 1/8 tsp onion salt
- salt to taste
Tangy Broccoli

Cut broccoli into florets and wash
- Brocolli
- Olive oil
- Butter
- Soy sauce
- Lemon juice
Salmon Salad

Salmon has many nutritional advantages over tuna
- 1 can salmon (about 16 oz)or leftovers
- 1/4 cup minced onion
- 1 medium stalk celery, minced (including leaves)
- 1 boiled egg, chopped
- 1/4 cup mayonnaise
- 1/3 cup dill pickle relish (see note below)
- fresh herbs, add 3 or so tbs, chopped. Dill, chives, parsley, and terragon.
Chicken Spaghetti

Simmer chicken until tender; strip from bone and cut into pieces
- 1 to 5 lbs. chicken
- 1 c. butter
- 3/4 c. flour
- 5 c. chicken broth
- 1 c. milk
- 1 can tomato paste
- 1 c. celery, chopped
- 1/2 c. green pepper, chopped
- 1/2 c. onion, chopped
- 1 can mushrooms
- 1 can pimento
- 2 clove garlic
- 2/3 lb. spaghetti, cooked
Garlic Bread

Simmer garlic cloves in water to cover 20 minutes
- 6 cloves garlic
- 1/4 c. melted butter
- 1/2 tbs Italian seasoning
- 1 loaf French bread
Blackened Catfish with Trinity of Sauteed Vegetables

Rinse rice in a strainer under cold running water for 30 seconds, swirling the rice around with your hand
- 1 1/2 c. brown rice
- 1/4 c. canola oil, divided
- 3 stalks celery, diced
- 1 gr bell pepper
- 1 onion, diced
- 1 tsp minced garlic
- Salt and fresh ground black pepper
- 1/4 teaspoon cayenne pepper
- 2 tsp lemon juice
- 2 tbs freshly chopped parsley leaves
- 1 lb catfish fillets
- 2 tbs Cajun seasoning
Slow Cooker Sesame Beef

Place beef strips in slow cooker
- 1 1/2 lb boneless beef chuck roast, sliced into thin
- strips
- 1 c. low sodium beef broth
- 1/2 c. oyster sauce
- 1/2 lb broccoli florets
- 1/4 c. water
- 2 tbs cornstarch
- Cooked rice
- Sesame seeds
Alea’s Asian Chicken Skillet

Brown chicken in a large skillet with a lid
- 3/4 lb. chicken cut into bite size pieces
- 1 sm onion, diced
- 2 celery stalks, thinly sliced
- 1 c. julienned carrots
- 1/2 c. bell pepper, diced
- 4 cloves garlic, mined
- 1/2 c. rice vinegar
- 1/2 c. oil
- 1/2 c. soy sauce
- 1 c. chicken broth
- 1/4 c.honey or sugar
- 3 tbs grated ginger
- 1 c. white basmati rice
- 1/4 c. sesame seeds (optional)
- 2 c. broccoli, finely chopped
Tasty Swiss Chard

- 1 bunch of Swiss chard cut in bite size pieces
- 1 onion, chopped
- 1/2 tbs oil
- 1/4 c. raisins
- 1/4 c. roasted pine nuts
