Creole Bean Soup

Bring 4 cups of water to a boil, add black beans and boil for 12 minutes
- 8 c. water
- 1 c. dry black beans
- 1 c. dry black-eyed peas
- 6 tsp powdered chicken bouillon
- 1 chopped onion
- 1 chopped gr. pepper
- 1 bay leaf
- 1 tsp Italian seasoning
- 1 tsp basil
- 1 14oz can stewed tomatoes
- 1 8oz can tomato sauce
- 2 c. frozen corn
- 2 tbs honey
- Salt to taste
Herb Salmon

Heat the broiler. In a small bowl, combine the parsley, chives, dill, and lemon zest and set aside
- 1/4 c. chopped fresh parsley
- 1/4 c. chopped fresh chives
- 2 tbs chopped fresh dill
- Zest of 1/2 lemon
- 4 6oz skinless salmon fillets
- 1 tbs olive oil
- Salt and black pepper
Upside-Down Sausage and Mushroom Pizza

Preheat oven to 400 degrees
- 1 pound Italian sausage, casing removed
- 1 chopped onion
- 1 chopped red bell pepper
- 8 oz sliced mushrooms
- 2 c. pasta sauce
- 1/2 c. sliced black olives
- 2 c. shredded mozzarella cheese
- 2 eggs
- 1 c. milk
- 1 tbs oil
- 1 c. all-purpose flour
- 1/2 tsp salt
- 1/4 c. grated Parmesan cheese
Vegetable Salad

Cut any large pieces of cauliflower or broccoli in half
- For the Dressing:
- 1/4 cup red wine vinegar
- 3 TBS olive oil
- 1 TBS chopped fresh coriander or parsley
- 1 garlic clove, peeled and minced
- 1 tsp sugar
- 1/2 tsp dried basil leaves
- For the Salad:
- 3 cups frozen cauliflower florets, thawed
- 2 cups frozen broccoli florets, thawed
- 1 (15.5 oz) tin of kidney beans, drained and rinsed
- 2 medium carrots, peeled and sliced diagonally
- 1 cup large pitted ripe olives, sliced
- 2 spring onions, trimmed and sliced
Hamburger/Veggie Soup

In a large soup pot, cook ground beef, onions and pepper
- 1 lb ground beef
- 1 chopped onion
- 1 chopped gr pepper
- 4 c. beef broth
- 1 c. fresh or frozen corn
- 1 16 oz diced tomatoes
- 1 c. frozen lima beans
- 1 potato, peeled and chopped
- 1 carrot, sliced
- 1 tbs chopped fresh basil
- 1 tsp Worcestershire sauce
- 1 bay leaf
- Salt & pepper
Light Tuna Melt

Mix tuna, mayonnaise, celery, and scallions in a small bowl
- 5.0 oz can tuna in water, drained (use salmon salad)
- 1 tbs mayonnaise
- 2 stalks celery, chopped
- 2 scallions, sliced
- 2 oz cheddar cheese (four small slices)
- 2 red bell peppers, halved, core and seeds removed
- salt and pepper to taste
Sweet Potato Pudding Recipe

Mash sweet potato in a bowl and mix in cinnamon
- 1/2 baked sweet potato
- 1/4 cup vanilla yogurt
- 1/4 teaspoon cinnamon
- sliced almonds for garnish (optional)
CrockPot Barbecue Beef and Bean Sandwiches

At least a 4 quart crockpot for this meal
- 3 pound chuck roast (mine was frozen solid)
- 1 yellow onion, sliced in rings
- 3 cloves chopped garlic
- 1 can (16.5 oz) barbecue baked beans
- 2 T water
- 1/4 cup prepared barbecue sauce
- cheese, optional
- jalapeno slices, optional
Lemon Rice Pilaf

Heat oil and butter in saucepan, add shallots and saute 2 minutes
- 1 tbs olive oil
- 1 tbs butter
- 1 lg shallot, finely chopped
- 1 1/2 c. brown rice
- 1/2 c. dry white wine
- 1 tbs fresh thyme, chopped
- 3 c. chicken broth
- 3 c. water
- Zest of 1 lemon
- 1 tbs chopped fresh parsley
- toasted slivered almonds, for garnish
Savory Chicken

Heat the oil in skillet over medium heat
- 2 tbs olive oil
- 2 boneless skinless chicken breast - halved
- 1 sliced onion
- 2 minced garlic cloves
- 1 tbs chopped fresh basil or 1 tsp dried
- 1/2 c. chicken broth
- Salt & pepper to taste
