Taco Salad

This taco salad recipe is an easy, quick and healthy
- 1 pound lean ground beef
- 1 package taco seasoning mix
- 1/4 cup water
- 1 large head romaine lettuce, torn into pieces
- 1 can kidney beans
- 1 1/2 cups chopped tomatoes
- 1 cup shredded cheddar cheese
- 2 cups tortilla chips, coarsely crushed
- 1/2 cup sour cream
- 2 tablespoons salsa
Pork Chops and Rice

Preheat oven 350 degrees. Heat the oil
- 2 tbs oil
- 6 pork chops
- 1 1/2 tsp salt
- 1/4 tsp pepper
- 1 c. rice
- 2 1/2 c. chicken broth
- 1/4 tsp basil
- 1/2 c. diced gr peppers
- 1/2 c. diced onions
Penne with Chicken,Mushrooms and Peas

Soak dried porcini mushrooms in hot water for 15 minutes, until soft
- 1-ounce dried porcini mushrooms
- 1 cup hot water
- 1 pound penne pasta
- 1 tablespoon olive oil
- 1 leek, rinsed well and chopped
- 1 cup sliced shiitake mushrooms
- 1 heaping cup cooked chicken
- 1 teaspoon dried tarragon
- 1 1/4 cups reduced-sodium chicken broth, divided
- 1 teaspoon cornstarch
- 1/2 cup frozen green peas
- 2 tablespoons chopped fresh parsley
- Salt
- Ground black pepper

Cracklin' Cauliflower

Preheat oven to 400 degrees
- 1 lg head cauliflower, cut into florets
- 1 red onion, cut into lg pieces
- 4-5 garlic cloves, halved
- 1 tbs fresh ginger, minced
- 2 tbs olive oil
- 1/2 tbs curry powder
- 1/2 tbs garam masala
- 1/2 tbs fennel seeds, mostly crushed
- 1 tsp salt (to taste)
- Pepper
Hamburger Steaks with Mushroom Gravy

Combine the ground beef, pepper, salt, seasoned salt, bread crumbs, egg and grated onion
- 1 lb ground beef
- 1/4 tsp pepper
- 1/2 tsp salt
- 1/4 tsp season salt
- 3 tbs bread crumbs
- 2 tbs milk
- 1 slightly beaten egg
- 2 tbs grated onion
- 2 tbs oil
- 3/4 c. sliced mushrooms
- 2 tbs flour
- 2 c. beef broth
- 1 tbs dry red wine (opt)
Broccoli Cheese Cornbread

Preheat oven to 400 degrees F
- 1/2 c. flour
- 1/2 c. cornmeal
- 2 tsp baking powder
- 1 teaspoon salt
- 2 eggs
- 5 oz chopped broccoli
- 1/2 cup cottage cheese
- 1/2 onion, chopped
- 1/4 c. butter, melted
Ragu-Stuffed Peppers

- 4 bell peppers (red, yellow or a mix), halved lengthwise, seeds removed
- 2 tablespoons extra-virgin olive oil
- Kosher salt
- 3 About 3 cups leftover ragu*
- 1/2 cup couscous
- 3/4 cup golden raisins
- 3/4 cup grated asiago or fontina cheese
- 4 teaspoons red wine vinegar
- 1/2 cup chopped fresh parsley
- 2 tablespoons tomato paste
Creamy Apple Coleslaw

Combine coleslaw mix with peppers, apple and walnuts
- 1 pkg coleslaw mix
- 1/2 diced gr. pepper
- 1 c. diced apple
- 1/4 c. chopped walnuts
- 1/3 c. mayonnaise
- 1/2 tsp prepared mustard
- 1 tsp sugar
- 1 tsp apple cider vinegar
- 1/4 tsp salt
- 1/4 tsp celery seeds
- 2 tbs milk
Sausage, Apple, and Walnut Stuffing

Coat a large saute pan, over medium heat, with olive oil and add the onions and celery
- Extra-virgin olive oil
- 1 large onion, finely diced
- 3 ribs celery, finely diced
- Kosher salt
- 3 cloves garlic, smashed and finely diced
- 1 pound spicy sausage, casing removed, broken up into bite-size chunks
- 3 Granny Smith apples, peeled, cored, and cut into 1-inch dice
- 1 cup apple cider
- 1/2 bunch sage, leaves finely chopped
- 3/4 cup coarsely chopped walnuts
- 10 cups stale rustic bread, crusts discarded, cut into 1-inch cubes; or fresh bread slices toasted until crispy but no color, cut into 1-inch cubes
- 2 to 3 cups chicken stock
Country Captian's Chicken

For the curry mix: Combine all the spices in a small bowl
- Curry Mix:
- 3 tabs ancho chili powder
- 2 tsps ground cumin
- 2 tsps ground coriander
- 2 tsps ground fennel
- 2 tsps ground turmeric
- 1 tsp ground cardamom
- 1 tsps ground cloves
- 1 tsps ground chili de arbol
- 1 tsps ground black pepper
- Coconut Rice with Green Onions:
- 1 tab unsalted butter
- 1/4 cup finely diced Spanish onion
- 2 cups long-grain rice
- 1 (13-14oz)can unsweetened coconut milk
- 1 cup water
- 1 1/2 tsps kosher salt
- 1/4 tsp freshly ground black pepper
- 4 green onions, thinly sliced
- Country Captain Chicken:
- 2 tsps canola oil
- 6 slices bacon, diced
- 2 tabs unsalted butter
- 1 tab canola oil
- 1 1/2 cups all-purpose flour
- Salt and freshly ground black pepper
- 8 bone-in chicken thighs, skin removed
- 1 medium onion, thinly sliced
- 1 large bell pepper,thinly sliced
- 2 cloves garlic, thinly sliced
- 2 heaping teaspoons Mesa curry mix, recipe above
- 1 cup water
- 2 cups homemade chicken stock
- 1 (28oz) can tomatoes, drained,chopped
- Scant 1/4 cup currants or raisins
- 1 1/2 tabs chopped fresh thyme leaves
