- 1 Hen or chicken
- 1 large onion
- 1 bell pepper
- 1 1/2 Small pkgs.Spaghetti
- 1 can tomato Soup
- 1 can mushroom soup
- 1 can mushrooms
- permentos and garlic to taste
- Salt and pepper
- 2 Tab. Worchestershire sauce
- 1 1/4 lbs.chedder cheese
Creamy Chicken Enchiladas

- ingredients
- 1/2 poundskinless, boneless chicken breasts
- 4 cupstorn fresh spinach or 1/2 of one 10-ounce package frozen chopped spinach, thawed and well-drained
- 1 8-ounce cartonlight dairy sour cream
- 1/4 cupplain fat-free yogurt
- 2 tablespoonsall-purpose flour
- 1/4 teaspoonground cumin
- 1/4 teaspoonsalt
- 1/2 cupfat-free milk
- 1 4-ounce candiced green chili peppers, drained
- 6 7-inch flour tortillas
- 1/3 cupshredded reduced-fat cheddar or Monterey Jack cheese (1-1/2 ounces)
- Chopped tomato or salsa (optional)
- Thinly sliced green onions (optional)
- 1/4 cupthinly sliced green onions
Shortbread Cookies

- Ingredients:
- 3/4 pound unsalted butter, at room temperature
- 1 cup sugar, plus extra for sprinkling
- 1 teaspoon pure vanilla extract
- 3 1/2 cups all-purpose flour
- 1/4 teaspoon salt
- 6 to 7 ounces very good semisweet chocolate, finely chopped
Italian Turkey Sliders with Honey Dijon Mayo

Directions Combine ground turkey, cheese and all seasonings

- 20 ounces lean ground turkey
- 2 Tablespoons grated Parmesan cheese
- 1 clove garlic, minced
- 1/2 teaspoon each dried basil and oregano
- 1 teaspoon salt
- pepper to taste
- 16 dinner rolls or slider rolls
- Honey Dijon Mayo:
- 1/3 cup mayonnaise
- 1 Tablespoon honey dijon mustard
SPINACH AND CHEESE ENCHILADAS

Bake tortillas at 450 degrees for 5 minutes
- 1 tbsp. olive oil
- 1 lg. onion, finely chopped
- 4 to 5 cloves garlic, minced
- 10 oz. frozen chopped spinach, thawed & drained
- 8 corn tortillas
- 1 (10 oz.) can mild enchilada sauce
- 1 c. cottage cheese
- 1 c. shredded Cheddar cheese
- 2 egg whites
- 1/2 tsp. salt
- Shredded Cheddar cheese & chopped chives, for topping (optional)

In a medium bowl, whisk together the flour, baking soda, cream of tartar, and salt
- 3 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cream of tartar
- 3/4 teaspoon salt
- 1/2 pound (2 sticks) butter, softened
- 1 cup granulated sugar
- 1 cup lightly packed light brown sugar
- 1 cup vegetable oil
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup puffed rice cereal
- 1 cup sweetened flaked coconut
- 1 cup rolled old-fashioned oats
- 1 (8-ounce) package toffee bits
- White chocolate, for dipping
- 15 peppermint hard candies, crushed, for garnish
Mama Jean's Chicken Noodle Soup

- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 large Vidalia onion, chopped
- 2 celery stalks, halved lengthwise and cut into 3/4-inch pieces
- 2 medium carrots, halved lengthwise and cut into 3/4-inch pieces
- Salt and freshly ground black pepper
- 2 cloves garlic, chopped
- 3 tablespoons all-purpose flour
- 6 cups chicken stock
- 1 bay leaf
- Dash hot sauce (recommended: Tabasco)
- Dash Worcestershire sauce
- 2 boneless, skinless chicken breasts, cubed into bite-size pieces
- 4 ounces egg noodles, about 1 cup
- 8 ounces frozen peas
- 1/4 cup freshly chopped dill leaves

Directions In a small bowl stir together the warm water, sugar, and yeast
- 1/2 cup warm water ( 110 degrees F/45 degrees C)
- 1 tablespoon white sugar
- 2 1/4 teaspoons active dry yeast
- 1/4 teaspoon baking soda
- 1 1/2 teaspoons warm water ( 110 degrees F/45 degrees C)
- 3/4 cup warm milk ( 110 degrees F/45 degrees C)
- 1/2 teaspoon salt
- 2 1/2 cups bread flour
- 2 tablespoons cornmeal
Pear Mincemeat

Grind all together pealing and all; add rest and cook 30 minutes covered, stirring slightly
- 7 lbs. pears
- 2 apples
- 1 lemon
- 1 orange
- 1 lb. raisins
- 6 c. sugar
- 1/2 c. vinegar
- 1 tsp. cinnamon
- 1 tsp. allspice
- 1 tsp. cloves
- 1 small crushed pineapple
- 1 c. grape juice
Wheat Rolls

Cover and allow to rise until quite puffy though probably not doubled, about 1 to 2 hours
- 4 hours | 30 min prep
- SERVES 16 1 cup lukewarm water
- 1/4 cup orange juice
- 4 tablespoons unsalted butter, cut into 6 pieces (2 oz.)
- 3 tablespoons honey
- 2 cups whole wheat flour (8 oz.)
- 1 cup unbleached all-purpose flour (4 1/4 oz.)
- 1 1/4 teaspoons salt
- 1/2 cup dried potato flakes (heaping 1/2 cup, 1 1/4 oz.)
- 1/4 cup nonfat dry milk powder (1 oz.)
- 2 1/4 teaspoons instant yeast
- Topping
- 2-3 tablespoons unsalted butter, melted
- Combine all dough ingredients, mix, and knead until a medium-soft, smooth dough is achieved. Can use a mixer or bread machine.
