Add the egg yolks to a blender or a food processor
- 3 egg yolks
- Juice of 2 whole lemons
- 2 sticks butter, melted and slightly cooled
- Dash of salt
- Cayenne pepper
- 4 whole eggs
- 2 English muffins, split, toasted and buttered
- 4 slices Canadian bacon, warmed in a skillet
- Dash of paprika
Kung Pao Chicken Recipe

In a large bowl, toss chicken with 1 teaspoon of sesame oil and set aside
- 1 - 1.5 pounds boneless chicken breasts, cut into 1" cubes
- 1 teaspoon sesame oil
- 1 teaspoon canola oil
- 1/2 cup roasted peanuts
- 1 clove garlic, minced
- 3-4 green onions, chopped with green portion reserved
- 1 green or red pepper, cut into 1" chunks
- Sauce
- 1 1/4 cup water
- 1/4 cup soy sauce (you can use low sodium if you prefer)
- 4 teaspoons cornstarch
- 1 Tablespoon granulated sugar
- 1 teaspoon red wine vinegar
- 4-5 dashes hot pepper sauce, such as Tabasco (or to taste)
Roasted Asparagus with Hollandaise

Preheat the oven to 400 degrees
- 12 tablespoons unsalted butter (1 1/2 sticks)
- 4 extra-large egg yolks, at room temperature
- 3 tablespoons freshly squeezed lemon juice
- Kosher salt and freshly ground black pepper
- 2 pinches of cayenne pepper
- 2 pounds fresh asparagus

Mexican Rice Casserole

Preheat the oven to 375 degrees F
- 2 tablespoons canola oil
- 3 cloves garlic, minced
- 1/2 to 1 whole large onion, chopped
- 4 cups long grain rice
- Two 14.5-ounce cans whole tomatoes
- One 10-ounce can diced tomatoes and green chiles, such as Rotel
- 1 teaspoon cumin (or more to taste)
- 1 teaspoon kosher salt
- 1 teaspoon ground black pepper
- 1/2 teaspoon cayenne pepper
- 1/4 teaspoon turmeric
- 6 to 8 cups low-sodium chicken broth (more if needed)
- 1 1/2 cups grated Cheddar
- Fresh cilantro, chopped, for serving
SALAD:

Added by Hard Boiled Eggs, Chopped Combine dressing ingredients in a separate bowl and mix well

- 2 heads Iceberg Lettuce, Chopped
- 8 ounces, fluid Baby Spinach, Washed And Dried

- 8 whole Hard Boiled Eggs, Chopped
- 16 ounces, weight Bacon, Cooked And Chopped
- 4 whole Tomatoes, Chopped
- 1 bunch Green Onions, Thinly Sliced
- 8 ounces, weight Cheddar Cheese, Grated
- 1 bag (10 Ounce) Frozen Peas, Partially Thawed
- FOR THE DRESSING:
- 1/2 cups (Real) Mayonnaise
- 1/2 cups Sour Cream
- 1 Tablespoon Sugar (more To Taste)
- Fresh Dill, Chopped
White Chocolate Cherry Almond Shortbread Cookies

Directions: 1. Preheat oven to 325 degrees F
- 1/2 cup maraschino cherries, drained and finely chopped (reserve 2 Tablespoons of liquid from cherries)
- 2 1/2 cups all-purpose flour
- 1/2 cup sugar
- 1 cup cold butter
- 12 ounces white chocolate baking squares with cocoa butter, finely chopped
- 2 teaspoons almond extract
- 2 drops red food coloring
- 2 teaspoons shortening
- White nonpareils, sprinkles, and/or red edible glitter (optional)
JALAPENO CORNBREAD

Mix dry ingredients (if not using mix)
- 1 1/2 c. cornmeal
- 1 1/2 c. sifted flour
- 1/2 tsp. salt
- 1 tbsp. sugar
- 1/2 tbsp. baking powder
- (You may substitute 3 c. cornbread mix for the above ingredients)
- 2 1/2 c. milk
- 1/2 c. salad oil
- 3 eggs, beaten
- 1 onion, grated
- 1 c. cream style canned corn
- 1/2 c. chopped jalapeno peppers
- 1 1/2 c. sharp cheddar cheese, grated
General Tsos Chicken

First, make the sauce. This can be done hours, even days, in advance
- THE SAUCE
- 1 tsp. sesame oil
- 4 tsp. Cornstarch
- 4 tsp. Sugar
- 4 tsp. Rice vinegar
- 6 tbs. Soy sauce
- 1/2 tsp. chicken bouillon granules
- 1/2 c Water
- 1/4 c White cooking wine
- THE REST OF THE INGREDIENTS
- oil for deep frying
- 1 lb. chicken breasts, cubed
- 1 egg
- 1 T. cornstarch
- a handful of dried chili peppers (japones or arbol)
- 1 tbs. fresh minced ginger
- 1 heaping spoonful of minced garlic (or, roughly 3 large cloves)
- 4 green onions, sliced diagonally in 1 inch pieces
- 3 cloud ear mushrooms, soaked and sliced into strips
- 1/2 cup of baby corn
- 1/2 cup snow peas
- 1 red bell pepper, diced
