Twice-Baked Potatoes

Preheat the oven to 400 degrees F
- 8 baking potatoes, washed
- 3 tablespoons canola oil
- 2 sticks salted butter
- 1 cup bacon bits (fry your own!)
- 1 cup sour cream
- 1 cup Cheddar or Jack cheese (or a mix of both), plus more for topping
- 1/2 cup whole milk
- 2 teaspoons seasoned salt
- 3 green onions, sliced
- Freshly ground black pepper
Margarita Cupcakes

Beat the butter until pale, then add the sugar
- 1/2 cup unsalted butter (room temperature)
- 2/3 cups sugar
- 3 eggs (room temperature)
- 1 1/2 cups flour
- 1 1/2 tsp. baking powder
- 1/2 tsp salt
- Zest of two limes
- 1/4 cup fresh lime juice (I use the two limes I zested) you could substitute with 1/4 cup margarita mix (the liquid prepared type)
- (I’ve made these cupcakes both ways and they were equally delicious)
- Margarita Frosting Recipe
- 1/2 cup butter (room temperature)
- 1/2 cup shortening
- 4-5 cups powdered sugar
- 2 T. Tequila (Use margarita mix to substitute the Tequila and lime juice if you prefer or want an alcohol free version )
- 1 T. fresh lime juice
Caramel Apple Pie Recipe

Instructions Preheat oven to 375 degrees
- Crust:
- ◦1 1/2 cups graham cracker crumbs
- ◦3 tablespoons sugar
- ◦1/2 teaspoon cinnamon
- ◦1/3 cup butter, melted
- ◦3/4 cup caramel ice cream topping
- ◦1 cup chopped pecans
- Apple Filling:
- ◦6 Granny Smith apples (peeled, cored, sliced very thin)
- ◦5 tablespoons butter
- ◦1/2 cup brown sugar
- ◦1/4 teaspoon salt
- ◦1 teaspoon cinnamon
- Cream Cheese Topping:
- ◦8 oz. cream cheese
- ◦1 teaspoon vanilla
- ◦1 egg
- ◦1 tablespoon lemon juice
- ◦1/4 cup sugar
- Topping:
- ◦whipped cream (homemade or store bought)
- ◦1/2 cup caramel ice cream topping
- ◦1/4 cup chopped pecans
Garlic Cheese Biscuits

- 1 1/4 cups biscuit mix
- 1/2 cup grated sharp Cheddar
- 1/2 cup water
- 1/2 stick unsalted butter, melted
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/8 teaspoon dried parsley flakes
Mediterranean Roasted Chicken Breasts with Tomatoes & Cannellini Beans

Directions: 1. Preheat oven to 450°F
- Ingredients for the chicken:
- 1/3 cup extra-virgin olive oil
- 4 garlic cloves, pressed
- 1 teaspoon smoked paprika
- 1 teaspoon coriander
- 1 teaspoon oregano
- 1 teaspoon ground cumin
- 1 teaspoon curry powder
- 1 teaspoon sriracha chili sauce*
- 1 teaspoon kosher salt
- 1 medium lemon, very thinly sliced
- 4 chicken breast halves, boned, but with skin left on (You can use the whole breast with skin and bones, if desired.)
- 2 15 ounce cans cannellini beans, rinsed and drained
- 2 pints cherry tomatoes. I like to use one of yellow or orange just to make it pretty
- 1 cup chopped fresh cilantro, divided
- Ingredients for the sauce:
- 1/2 cup plain yogurt or Greek yogurt
- 1 medium ripe avocado, smoothly mashed
- Juice of 1 lemon
- 2 teaspoons extra virgin olive oil
- 1/2 teaspoon sea salt
German Chocolate Cupcakes

Preheat oven to 350 degrees
- Bowl Chocolate Cupcakes:
- 1 cup all-purpose flour
- 1/2 cup packed light-brown sugar
- 1/3 cup granulated sugar
- 1/3 cup cocoa powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/3 cup vegetable oil
- 1/3 cup milk
- 1 large egg
- 1 tsp vanilla extract
- 1/3 cup hot water
- 1/4 cup sour cream
- Coconut Pecan Topping:
- 1/2 cup evaporated milk (regular fat)
- 2 large egg yolks
- 1/2 cup packed light-brown sugar
- 1/4 cup salted butter, diced into pieces
- 1/2 tsp vanilla extract
- 1 cup sweetened shredded coconut
- 3/4 cup chopped pecans
- Chocolate Frosting:
- 4 oz semi-sweet chocolate, chopped
- 6 Tbsp salted butter, softened
- 3 oz cream cheese, softened
- 1 1/4 cups powdered sugar
- 2 1/2 Tbsp cocoa powder
- 2 - 4 tsp heavy cream, as needed
Gluten-Free Turkey Soup Recipe

Turn the slow cooker on High
- 1 1/2 lb. fresh turkey breast, skin on
- 3-4 cloves garlic, chopped
- Half a red onion, finely dived
- 2 ribs of celery, trimmed and chopped
- 4 large carrots, sliced (I plan on one carrot per person)
- Half a medium-large winter squash, peeled and cubed (butternut, banana, etc)
- Sea salt and fresh ground pepper, to taste
- Italian style herbs, to taste (basil, rosemary, thyme, marjoram)
- 1 tablespoon balsamic vinegar
- Fresh cold water, as needed
- Fresh chopped parsley, for serving
Mississippi Mud Cake

Preheat the oven to 350 degrees F
- Icing:
- 2 cups of sugar
- 1/2 teaspoon of salt
- 2 cups of all-purpose flour
- 1 stick, unsalted butter
- 1/2 cup of vegetable oil
- 1/2 cup of cocoa
- 1/4 cup of water
- 2 eggs
- 1 teaspoon of baking soda
- 1/2 cup of buttermilk
- 2 teaspoons of vanilla extract
- 1 bag of miniature marshmallows
- 1 stick, of unsalted butter, softened
- 3 tablespoons of cocoa
- 6 tablespoons of milk
- 1 (1-pound) box of confectioners’ sugar
- 1 cup of chopped pecans or walnuts
- 1 teaspoon of vanilla extract
Four Cheese Risotto with Bacon & Caramelized Onions

In a large skillet, cook and brown bacon slices
- 6 slices of bacon, cut into pieces
- 1 onion, sliced thin
- 6 cups of stock or broth
- Splash of olive oil
- 12 oz arborio rice
- 3 garlic cloves, minced
- 1/2 cup white wine, at room temperature
- 1 cup shredded sharp white cheddar
- 1/2 cup shredded monterey jack cheese
- 1 tbsp cream cheese
- Pepper, to taste
- Shredded Parmesan cheese, for garnish
Homemade Chicken-Lemon Soup

Instructions Heat the olive oil in a dutch oven over medium-high heat
- 1 tbsp olive oil
- 1 medium onion, chopped
- 3 cloves of garlic, minced
- 32 oz carton of chicken broth (or 4 cups)
- 2 cups water
- 3/4 cup uncooked rice (I like to use Basmati rice in this.)
- Juice of 1 lemon
- 2 tsp cornstarch
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 egg, lightly beaten
- 2 cups of chopped or shredded cooked chicken
- chopped fresh parsley and lemon wedges- for garnishing (optional)
