Andouille Breakfast Potatoes

Prep - Cut up potatoes into half inch chunks
- ◾enough potatoes to feed your "crew" (enough to fill the bottom of a black iron skillet)
- ◾1/2 pound smoked andouille sausage (or good smoky pork sausage), cut into small chunks
- ◾1/2 cup sweet onion, diced
- ◾1sprig of fresh rosemary, stripped from the stems
- ◾1 Tbsp vegetable oil
- ◾Tony Chachere's Creole seasoning - to taste
Creamy Cheddar Polenta

Bring the milk, 2 cups of the water, and a very large pinch of salt to a boil in a medium saucepan
- 1 cup whole milk
- 2-3 cups water
- 1 cup cornmeal (medium grind)*
- 3 tablespoons butter
- 1 tablespoon extra virgin olive oil
- 1 cup sharp white cheddar cheese, shredded
- Kosher salt
- Freshly ground black pepper
- my personal preference is 1/2 cup finely ground and 1/2 cup medium ground corn meal
Hummingbird Cake

Directions Preheat the oven to 350 degrees F
- Frosting:
- Nonstick baking spray
- 2 sticks (1 cup) butter, softened
- 2 cups granulated sugar
- 1 tablespoon vanilla extract
- 4 large eggs
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon salt
- 1/3 cup buttermilk
- 1 1/2 cups mashed ripe banana (about 4 medium)
- One 8-ounce can crushed pineapple
- Frosting, recipe follows
- Optional garnishes: sweetened flaked coconut, chopped macadamia nuts
- 2 sticks (1 cup) butter, softened
- Two 8-ounce packages cream cheese, softened
- 2 cups confectioners' sugar
- 1 tablespoon lemon juice
- 1 teaspoon pure vanilla extract
Tomato Basil Chicken

Season chicken breasts with kosher salt and fresh cracked black pepper
- ◾2 chicken breasts
- ◾kosher salt and black pepper
- ◾2 Tbsp extra virgin olive oil
- ◾2 cups chopped fresh tomatoes
- ◾2 tsp minced fresh garlic
- ◾4 Tbsp cold butter
- ◾1/2 cup fresh basil, chopped
- ◾freshly grated Parmigiano reggiano cheese, for garnish
Macaroni and Cheese

Preheat oven to 350. Spray a 9x13 baking dish with cooking spray
- 16 oz Elbow Maaroni
- 4 eggs
- 4 tbs all-purpose flour
- salt & pepper
- 4 c whole milk
- 4 c shredded cheese (various)
- 8 oz Velveeta cheese (cubed)
Funky Monkey Morning Smoothies

Process everything together and serve immediately
- Ingredients: (for 2 glasses)
- 1 (8oz) container Very Vanilla Silk Soymilk
- 1 large ripe banana
- 2 Tbsp peanut butter
- I used Peter Pan honey roast creamy all natural
- 1 1/2 Tbsp unsweetened cocoa powder
- 3 Tbsp granulated sugar
- meant to use sugar in the raw, but forgot
- 1 - 1 1/2 cups ice
Chile Colorado Burritos

Put beef, whole bouillon cubes (do NOT add water), and enchilada sauce*** into a crock pot and cook on low for 7-8 ...
- 1 1/2 to 2 pounds stew meat or other beef cubed (top sirloin is great)
- 1 large can mild (red) enchilada sauce* (at least 19 oz.)
- 2 beef bouillon cubes (or just one--or none--if you want it less salty AND you do NOT add water, just the bouillon)
- 1/2 can refried beans (optional)
- 5-7 burrito size flour tortillas
- 1 cup or so of shredded cheddar cheese
French Onion-Pork Chop Skillet

- 6 boneless pork chops (1-1/2 lb.), 1/2 inch thick
- 2 onions, thinly sliced

Place pasta, tomatoes, onion, and garlic in a large stock pot
- 12 ounces linguine pasta
- 1 can (15 ounces) diced tomatoes with liquid ( I used zesty red pepper flavor style)
- 1 medium sweet onion, cut in 1/4 inch julienne strips (use an onion such as Vidalia or Walla Walla)
- 4 cloves garlic, very thinly sliced
- 1/4 teaspoon red pepper flakes
- 2 teaspoons dried oregano leaves
- 4 1/2 cups vegetable broth (use regular broth and NOT low sodium)
- 2 tablespoons extra virgin olive oil
- 1 bunch (about 10 to 12 leaves) basil, diced
- Parmesan cheese for garnish
