- 2 eggs, well beaten
- 1/2 cup flour
- 1 teaspoon black pepper
- 1/2 sleeve Saltine crackers, crushed to make about 2 cups of crumbs
- 1/4 cup vegetable oil or bacon grease or a combination, for frying
Cafe Rio Crockpot Chicken

Combine all ingredients in a Freezer Gallon Ziplock Bag
- 4-6 Chicken Breasts
- 1/2 a small bottle of Zesty Italian Dressing
- 1 Packet of Dry Ranch Dressing (3 TB)
- 1/2 Cup Water
- 1/2 TB of Minced Garlic
- 1/2 TB Chili Powder
- 1/2 TB Ground Cumin
Aunt Anne's Potato Salad

Boil unpeeled potatoes until tender
- 5 lbs Red Potatoes
- 2 dozen Eggs
- 1/2 c Onion (chopped)
- 1/2 c Celery (chopped)
- 1 c Sugar
- 3/4 c White Vinegar
- 1/2 c Mayo
- Celery Seed
- Onion Powder (if not using onion)
- Salt & Pepper
Fried Pork Spring Rolls

- 500 g. of ground pork (with a good amount of fat)
- 1 large onion, chopped
- a few cloves of garlic, chopped
- 1 medium-sized carrot, chopped or grated

Garlic Parmesan Pizza Biscuit Cups

Instructions Heat oven to 350°F
- 1 can (16.3 oz) Pillsbury Grands! refrigerated biscuits
- 1/4 cup grated Parmesan cheese
- 2 Tsp Garlic Powder
- 2 Tbsp melted butter
- 2 Tbsp Olive oil
- 1 1/2 cups shredded Mozzarella Cheese
- Choice of toppings (olives, bacon, pepperoni, ect)
Spinach Artichoke Pasta

Melt 2 tablespoons butter in a large pot or skillet
- 6 Tablespoons Butter
- 4 cloves Garlic, Finely Minced
- 2 bags Baby Spinach
- 2 cans Artichoke Hearts, Drained And Halved
- 3 Tablespoons Flour
- 3 cups Whole Milk
- 1/4 teaspoon Cayenne Pepper
- Salt And Pepper, to taste
- 1/2 cup Grated Parmesan Cheese
- 1-1/2 cup Mozzarella Or Monterey Jack Cheese, Grated
- 1/2 cup Low Sodium Chicken Broth (less Or More)
- 12 ounces, weight Penne, Cooked Until Al Dente
- 1/2 cup Seasoned Panko Breadcrumbs
- Crushed Red Pepper, To Taste

In a large stockpot over medium-high heat, cook the bacon and olive oil until the bacon is crisp, about 5 minutes
- 8 ounces bacon, chopped
- 1/4 cup good olive oil
- 6 cups chopped yellow onions (4 large onions)
- 4 tablespoons (1/2 stick) unsalted butter
- 1/2 cup flour
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 1/2 teaspoon ground turmeric
- 12 cups chicken stock
- 6 cups medium-diced white boiling potatoes, unpeeled (2 pounds)
- 10 cups corn kernels, fresh (10 ears) or frozen (3 pounds)
- 2 cups half-and-half
- 1/2 pound sharp white cheddar cheese, grated
