Ingredients

    # lean ground beef

  • 3

    C or 3 cans drained black beans

  • 1

    C diced green pepper1 C chopped onion

  • 1

    C diced carrots

  • 1

    T chili powder

  • 2

    garlic cloves, minced

  • 2

    bay leaves

  • 1/2

    t pepper

  • 3

    C vegetable or tomato juice

  • 1

    t cumin

  • 1

    can corn

  • 4

    C hot cooked rice

  • chips, tomatoes, cilantro and sour cream to garnish as desired

Directions

Brown beef. Add all ingredients except rice. Simmer 20-25 min. Remove bay leaves. Serve over hot rice with chips on side. Top with tomatoes, cilantro and sour cream.
