Coconut Cream Pie Bars

- For the Crust:
- Coconut Cream Pie! LOVE THIS!!!!
- 1 cup flour
- 1/2 cup butter, melted
- 2 Tbs sugar
- 1/2 cup chopped pecans - optional
- Mix and pat in an 8x8 inch pan, bake at 350 degrees for 15-20 minutes, until just beginning to turn golden. Do not over bake.
- Layer two:
- 8 ounces cream cheese, room temperature
- 1 cup powdered sugar
- 1 cup whipped topping
- Beat together sugar and cream cheese. Fold in whipped topping. Spread on cooled crust.
- Layer three:
- 1 small package coconut cream instant pudding
- 1 1/2 cups whole milk (any milk will do, but whole milk makes pudding so much tastier)
- Mix until thickened. Spread over cream cheese mixture.
- Top with remaining tub of whipped topping.
- Toast 1 cup coconut. Sprinkle evenly on dessert. Refrigerate.
Homemade Vanilla

Directions 1. Use a knife to split the bean in half, leave about ½ inch at each end intact
- 5-6 good quality vanilla beans used per 1 cup of alcohol.
- 1 glass bottle with lid and good seal or a canning jar size
- depends on how much you want to make
- 1 bottle alcohol preferably vodka but can use
- bourbon, rum, or brandy
Lemon Winter Pudding

Mix cake as instructed on box
- 1 yellow cake mix
- 2 pkg instant lemon pudding
- 2 C milk
- 1 1/4 C water
- powdered sugar to dust on top

- Ingredients
- 3 cups flour
- 1/2 tsp. salt
- 1 cup sugar
- 4 tsp. baking powder
- 1 1/2 cup milk
- 2 eggs
- 2 tsp. vanilla
- 1/2 cup butter melted
- 1 cup butter softened
- 1 cup brown sugar
- 2 TB flour
- 1 TB cinnamon
Pumpkin Dessert

- 1 3/4 C sugar
- 1 t salt
- 2 t cinnamon
- 1 t pumpkin spice
- 13 oz evaporated milk
- 1 box yellow cake mix
- 1 stick marg or butter

- Cheesecake Dimples:
- 8 oz cream cheese, softened
- 1/3 C flour
- 1/2 C sugar
- 1/2 t vanilla
- 2 T milk
Easy Taco Casserole

Preheat oven to 350 degrees
- 1 16 oz can refried beans (fat free)
- 1 pound lean or extra lean ground beef
- 1 medium onion chopped
- 1 tsp garlic powder
- 1 4 oz can diced chilies
- 1/2 (1.25 oz) pkg taco seasoning
- 1 12 oz cans enchilada sauce (divided)
- 1 16 oz pkg baked tortilla chilps, crumbled coarsely
- 2 C shredded cheddar cheese (reduced fat)
- optional toppings: salsa, fat free sour cream
Spaghetti Sauce

Mix and heat. Pour over spaghetti noodles
- 1 onion (or 1 T dried) diced
- 1/2 tsp minced garlic
- 1 can diced tomatoes
- 1 can tomato paste
- 1 can tomato sauce
- 2 tsp oregano
- 2 tsp basil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp thyme
- 1 tsp Italian seasoning
- can add grated carrots

- 1/2 C sugar
- 2 t vanilla
- 1 t. cinnamon
- 2 whole eggs
- 2 egg whites
- 5 C milk, divided
- 1 loaf French bread, ends trimmed, cut into 18 slices
- 1 pkg frozen unsweetened raspberries or fresh raspberries
- 1 pkg (3.4 oz) jello vanilla instant pudding
