Mint Chocolate Chip Cookies

1. Mix cookie mix, butter, extract, food color and egg in bowl until soft dough forms
- 1 pouch Betty Crocker sugar cookie mix
- 1/2 C butter
- 1/4-1/2 t mint extract
- 6-8 drops green food color
- 1 egg
- 1 C creme de menth baking chips
- 1 C chocolate chips
Bean Casserole

Cut bacon in pieces and fry with g
- 1 # bacon
- 1 # g. beef
- 1 onion, chopped
- 1/2 C ketchup
- 2 cans pork and beans
- 2 cans kidney beans
- 1 can lima beans
- 1 t. dry mustard
- 2 T molasses
- 1 t. vinegar
- 1/2 C brown sugar
Whole Wheat Buns (My recipe)

1. Place all ingredients in bread maker pan
- 1 Cup water
- 1 egg
- 1 1/2 C whole wheat flour
- 1 1/2 C white whole wheat flour
- 3/4 t salt
- 1/4 t shortening (I use coconut oil)
- 1/4 C sugar
- 3 t yeast
- 1 T vital wheat gluten
Zucchini Hot Dish- Lori

- 5 slices of bacon
- 2 C shredded cheddar cheese
- 1 medium onion
- 6 C zucchini, sliced, not peeled if tender
- 6 fresh tomatoes or 1- 16 oz can of diced tomatoes
- 1/2 C brown rice, uncooked
- 1/8 t pepper
Mirepoix Soup

Heat the butter in a medium saucepan over medium-high heat until hot
- Serves 4
- 2 tablespoons unsalted butter or olive oil
- 2 large onions, chopped
- 3 celery stalks, chopped
- 1 lb. carrots, chopped
- Kosher salt and freshly ground black pepper
- 2 bay leaves
- 2 thyme sprigs
- 1 1/2 quarts vegetable stock or water
- 1 cup heavy cream (optional)
- 1 grated carrot
- Celery leaves or mizuna for garnish
Cheddar Garlic Red Smashed Potatoes

Preheat oven to 375F. In large pot, boil potatoes until firm but not mushy
- 8-10 little red potatoes, cleaned and skin left on
- 1 T parsley
- 1 T chives
- 1 t dry mustard
- 1 t coarse ground pepper
- 1 t sea salt
- 1 t paprika
- 1 t chili powder
- 1 t chopped garlic
- 2/3 cup heavy cream
- 1/2 stick butter, cut into pieces
- 3 slices cooked bacon, cut into pieces
- 2/3 cup cheddar cheese (Can use more or less of any of this)
Chicken, Bacon, Ranch and Cheese Tator Tot Casserole

Place 1/2 the tater tots on the bottom of the crock pot, that has been sprayed with Pam
- 2 skinless, boneless chicken breasts, cut into cubes
- 1 2-lb package of tater tots
- 1 and 1/2 cups shredded sharp cheese
- 8 slices of bacon, cooked and crumbled (I used maple bacon)
- 1 cup of milk
- 1 pkg of dry ranch dressing mix (I used Hidden Ranch original)
Rhubarb Dessert

Mix crust and pat into 8 X 10 inch pan
- Crust:
- 1 C flour
- 2 T sugar
- 1/2 C nuts
- 1/2 C nuts
- 1/2 C butter
- dash salt
- Filling:
- 3 egg yolks beaten (use whites in topping)
- 1 1/2 C sugar
- 3 1/2 C rhubarb
- 1/2 C cream or evaporated milk
- 3 T flour
- Topping:
- 3 egg whites
- 1/2 C sugar
Loaded Potato Soup

In a 6- to 8-quart stockpot over medium heat, fry bacon until crisp
- 1 pound bacon, roughly chopped
- 1 medium yellow onion, diced
- 1 large carrot, peeled and diced
- 3/4 cup diced celery
- 4 large Russet potatoes, peeled and diced
- 4 medium red potatoes, diced
- 1/4 cup flour
- 2 cups chicken or vegetable stock
- Coarse salt, freshly ground pepper, to taste
- 4 cups heavy whipping cream
- Optional garnishes: chopped chives, bacon bits, sour cream, shredded cheddar and Monterey Jack cheese
