Pina Colada Rum Cake

Preheat oven to 350 degrees
- 1 box Duncan Hines Classic Golden Butter Cake mix (preferred mix) or Classic Yellow
- 1/4 C (4 oz.-1 stick) unsalted butter, softened
- 3 large eggs
- 8-oz. can crushed pineapple in juice, drained (reserve juice to make 1/4 cup)
- 1/4 C reserved juice of crushed pineapple
- 1/4 C Malibu Rum (or any light rum)
- 1/2 C cream of coconut (Coco Lopez)
- 1/2 C Malibu rum
- 1/4 C confectioner’s sugar
BUTTERSCOTCH SAUCE

Place corn syrup, brown sugar, butter & salt in saucepan
- 3/4 c light corn syrup
- 2 c brown sugar
- 1/2 c unsalted butter
- 1/2 tsp salt
- 1 c heavy cream
CHICKEN DIVAN

Cook, drain and arrange broccoli in 1 ½ qt dish
- 1 package broccoli
- 1/2 tsp curry powder
- 2 chicken breasts
- cream of chicken soup
- 1/4 c soft bread crumbs (1 slice bread in blender)
- 1/2 c mayonnaise
- 2 T melted butter
- 1/2 c shredded cheddar
FRIENDSHIP CAKE

To keep starter alive: 1. Mix 1 ½ c starter liquid, 2 ½ c sugar and 28 oz can sliced peaches with syrup
- Starter:
- 1 . Mix 1 c canned pineapple chunks, 1 c sugar and 2 T brandy. Cover and let sit at room temperature two weeks, stirring daily.
- 2 . Then add 1 c maraschino cherries with liquid, 1 c sugar and an additional 2 T brandy. Let sit two more weeks, again stirring daily.
- 3 . At the end of two weeks, add 1 c sliced canned peaches with syrup, 1 c sugar and 2 T brandy. Again, let sit for two weeks, stirring daily.
- 4 . AT the end of six weeks, drain fruit, reserving liquid. The liquid is the starter for the cake. The fruit may be served over pudding or ice cream, or topped with whipped cream, it not used in a cake.

Pre-heat oven to 400* Combine water, oil, yeast, and sugar in a large bowl

- 1/3 C oil
- 2 Tbl dry active fast rising yeast
- 1/4 C sugar
- 1/2 tsp salt
- 1 egg
- 3 1/2 C flour (all purpose)
Pie Crust

- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/4 cup vegetable shortening
- 1/4 cup butter
- 4-5 tablespoons ice water

- 1 cup chocolate chips - semi sweet, divided

- 1/2 cup peanuts - unsalted, dry roasted and chopped
- 16 ounces cream cheese - softened
- 1 cup sugar
- 1 teaspoon vanilla extract
