Lemon Cheesecake

For the lemon curd •NOTE: Do NOT boil
- For the lemon curd
- 1/2 cup fresh lemon juice
- 2 teaspoons finely grated fresh lemon zest
- 1/2 cup sugar
- 3 large eggs
- 3/4 stick (6 tablespoons) unsalted butter, cut into bits
- For the crust
- 1/2 cup butter softened
- 1/2 cup coconut oil
- 11/2 Cups sugar
- 2 Tablespoons finely shredded lemon peel
- 1 tsp. baking soda
- 1 tsp. cream of tartar
- 2 eggs
- 1 tsp. vanilla
- 3 Cups flour
- For the No Bake-Cheesecake filling
- NOTE: I used some lemon juice and zest left from the curd and crust. This is a lemony dessert. If you want to tone down the lemon, eliminate the lemon zest.
- 1 Tablespoon. fresh lemon juice (to taste)
- 1 Tsp. finely grated lemon zest (to taste)
- 3 packages (8 Ounces Each) Cream Cheese, Softened
- 1-1/2 cup Sugar
- 2 teaspoons Vanilla Extract
- 1/2 cup Sour Cream
ANNIE’S GLORIFIED RICE

From the restaurant
- 1 c Carolina rice (uncooked)
- 1 small can crushed pineapple
- 8-10 oz Cool Whip
- 1/2 c sugar
ORANGE JULIUS

Put ice cubes in blender 1 at a time, then add orange juice, milk and sugar
- 14 ice cubes
- 16 oz orange juice
- 1 c milk
- 1/2 c sugar
ROOT BEER COOKIES

Mix in order given; drop by spoonful on ungreased cookie sheet
- 3/4 c brown sugar
- 1 tsp rootbeer extract
- 1/2 c soft margarine
- almost 2 c flour
- 1 egg
- 1 1/2 tsp baking powder
- 1/4 c buttermilk
- 1/2 tsp salt.
- Buttermilk: Add 2 tsp vinegar for each cup of milk
MARLA’S STRAWBERRY PIE

Mix well until consistency is like peas
- Crust: 2 c flour
- dash of salt,
- 1/2 c shortening.
TOFFEE APPLE PIE CHEESECAKE

Heat oven to 325. Mix ginger snaps & 2 T sugar
- 1 c crushed ginger snaps
- 2 tsp vanilla
- 3 T butter, melted
- 1/2 c sour cream
- 1/2 c sugar, 2 T sugar
- 2 eggs
- 2 8 oz cream cheese
- 1 c apple pie filling
HAM BALLS

Combine eggs, milk, bread crumbs and pepper
- 3 eggs
- 3/8 tsp pepper
- 1 1/2 c milk
- 2 lb pork sausage
- 1 1/2 c bread crumbs
- 1 lb ground ham
Szechuan Pepper Beef Noodles

Bring a pot of water to a boil, salt it, add the noodles and cook until al dente
- 1 pound dried Chinese noodles or thin spaghetti
- 3 tablespoons vegetable oil
- 1 pound ground beef
- 1 onion, minced
- 1 small red chile pepper, such as fresno, minced
- 4 large cloves garlic, minced
- 1 piece (1 inch) ginger, minced
- 2 teaspoons Szechuan pepper
- 1 teaspoon Chinese five-spice powder
- 1/4 to 1/3 cup tamari (dark soy sauce) or liquid amino (a gluten-free alternative to soy sauce and tamari), such as Bragg
- 2 cups shredded iceberg lettuce
- 1 bunch scallions, thinly sliced on an angle
VEGGIE PIZZA

Spread dough on sheet. Bake 10 minutes
- 2 packages Pillsbury crescent roll mix
- 1/2 c mayonaise
- 16 oz cream cheese
- 1 Hidden Valley Ranch, original
WILD RICE

- 6 T butter, melted
- 1 T onion
- 1/2 c flour
- 3 c chicken broth
- 2 c wild rice
- 1/2 tsp salt
- 1 c half and half
