- 2 small beets, cut into quarters
- 1 cup raw cranberries
- 1/2 medium head red cabbage, cut into wedges
- 1 cup pomegranate arils (approximately 1 whole pomegranate worth.)
- 1/4 cup walnuts, coarsely chopped
- Stevia, to taste*

In a large sauté pan, heat oil over medium heat
- Bechamel sauce:
- 1 tablespoon olive oil
- 2 cups finely diced yellow onion
- 1/2 cup chopped carrots
- 1/2 cup chopped celery
- 3/4 pound ground pork
- 3/4 pound ground sirloin
- 2 tablespoons chopped garlic
- 1 teaspoon dried thyme
- 3 bay leaves
- 1/2 cup Chianti or dry red wine

- 12 lasagna noodles (your favorite brand)
- 1 container (16 ounces) ricotta cheese
- 1 egg
- 1 tablespoon salt
- 1/4 teaspoon freshly ground black pepper
- 3/4 cup grated Parmesan cheese
- 2 cups shredded mozzarella cheese
- 1/4 cup minced fresh parsley for garnish
- 2 to 3 tablespoons butter
- 2 to 3 tablespoons flour
- 3/4 cup heavy whipping cream
- 1/4 cup whole milk
- 1 teaspoon ground nutmeg

- 1 1/2 teaspoon salt
- 1 teaspoon pepper
- 2 large eggs
- 1 cup Panko breadcrumbs*
- 1/2 teaspoon paprika
- 1 teaspoon onion powder
- FIRECRACKER SAUCE:
- 1/2 cup hot sauce (I recommend Franks)
- 1 cup light brown sugar
- 2 tablespoons apple cider vinegar
- 1/4 teaspoon salt
- 1/4 to 1/2 teaspoon red pepper flakes (depending on spice preference)

- 1 can (8 ounces) tomato sauce
- 1 cup water
- 1/4 cup lemon juice
- 1/3 cup raisins
- MEATBALLS:
- 1 tablespoon minced garlic
- 1/4 cup chopped onion
- 2 cup uncooked long grain rice
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 dash cayenne pepper(I like, or skip)
- 1 pound lean ground beef (90% lean)
