Take two pieces of focaccia and spread on the special sauce
- Special Sauce:
- 1 cup mayonnaise
- 1/2 cup ketchup
- 2 tablespoons lemon juice, freshly squeezed
- 1/2 teaspoon dried mustard
- 1 teaspoon Worcestershire sauce
- Dash of hot sauce, more or less to taste
- Sandwich fixings:
- 1 loaf herbed Parmesan focaccia
- 6 tomato slices
- Romaine lettuce
- Thinly sliced turkey
- 12 slices bacon, cooked
- 6 slices smoked Gouda
Bacon-Horseradish Mashed Potatoes

Just the right amount of horseradish adds a kick of flavor to brighten up a comfort food classic
- 1 1/2 pounds baby "creamer" potatoes, scrubbed and cut into 1-inch chunks
- 3 slices bacon, chopped
- 1/3 cup chicken broth
- 1/4 cup sour cream
- 2 tablespoons horseradish sauce (such as Kraft) or 2 teaspoons bottled shredded horseradish, to taste Salt and freshly ground pepper, to taste
- 1/4 cup sliced scallion greens, plus more for garnish
Mini Cranberry Meatballs

Preheat the oven to 400 degrees F
- Nonstick cooking spray
- 1/2 cup dry breadcrumbs
- 1/3 cup chopped fresh cranberries, or dried if fresh is unavailable
- 1 tablespoon tomato paste
- 1 teaspoon Dijon mustard
- 1 teaspoon olive oil
- 1 teaspoon chipotle pepper sauce
- 3/4 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 2 cloves garlic, minced
- 1 large egg, lightly beaten
- 1 1/2 pounds ground round
- Sweet-Hot Dipping Sauce, recipe follows
- One 12-ounce jar red currant jelly
- 1/4 cup orange juice
- 3/4 teaspoon orange zest
- 1 tablespoon Dijon mustard
- 2 teaspoons minced shallot
- 1 teaspoon chipotle pepper sauce
- 1/8 teaspoon ground ginger
- 1 1/2 teaspoons cornstarch
Joan's in the Park Beef Cheek Braise

Salt and pepper the beef cheeks and brown them on high heat in a large sauté pan in batches
- 10 lb Beef cheek cleaned and trimmed
- 1 cup chopped onion
- 1 cup chopped celery
- 1 cup chopped carrot
- 1 cup red wine
- 1/2 cup port wine
- 1/4 cup dark brown sugar
- 3 bay leaves
- 1 tsp whole black peppercorns
- 3/4 tbl kosher salt
- 1 cup stock
- Salt and pepper as needed
Oktoberfest Potato Salad/Beer Dressing

1. Boil potatoes in medium-size saucepan until just tender
- 6 Medium Potatoes
- 4 Slices of Bacon
- 1 tbsp Chopped Onion
- 1 Stalk Celery, Chopped
- 1 tsp Salt
- 2 tbsp Butter
- 2 tbsp Unbleached Flour
- 1/2 tsp Dry Mustard
- 1 tbsp Sugar
- 1 cup Beer; Any Brand
- 1/2 tsp Tabasco Sauce
- 2 tbsp Parsley; Chopped Fresh
Apple Crisp

Heat the oven to 350 degrees
- 9 to 10 Northern Spy or similar apples (3 to 3 1/2 pounds)
- 2 tablespoons honey
- 1/4 cup apple juice
- 1 1/4 cups flour
- 1 cup brown sugar
- 1/2 cup chopped walnuts
- 1/2 cup oats
- 1/2 teaspoon cinnamon
- 1/2 teaspoon ground nutmeg
- 2/3 cup butter
Skillet Barbecued Chicken

In large skillet melt butter with curry powder and garlic
- Chicken, with or without skin, bone or boneless
- 2 tbsp. butter
- 1 tsp. curry powder
- 1 clove garlic, minced
- 1 can onion soup
- 2 tbsp. flour
- 1 1/2 cups of water
- 1/2 cup of ketchup
- 1 tbsp. honey
- 1 tsp. Worcestershire sauce
The Best Waffles Ever

1) Grease and preheat your waffle iron according to the manufacturer's instructions
- 2 2 2 large eggs, at room temperature; separated
- 1 1/2 1 1/2 1/2 cups buttermilk, at room temperature
- 2 2 2 tablespoons melted butter
- 2 2 2 tablespoons vegetable oil, for added crispness; optional, but good
- 1 1 1 cup King Arthur Unbleached All-Purpose Flour
- 4 4 4 teaspoons yellow cornmeal or cornstarch
- 1 1 1 teaspoon baking powder
- 1/2 1/2 1/2 teaspoon baking soda
- 1/4 1/4 1/4 teaspoon salt
- 1/2 1/2 1/2 teaspoon sugar
Creamy Shrimp Scampi Dip

Position an oven rack in the top position, and preheat the oven to 375 degrees F
- 8 ounces cream cheese, at room temperature
- 1 cup shredded part-skim mozzarella
- 1 cup sour cream
- 1/2 cup mayonnaise
- 1/2 cup grated Parmesan
- 4 tablespoons plain dried breadcrumbs
- Kosher salt
- 2 tablespoons unsalted butter, plus 1 tablespoon melted unsalted butter
- 1 pound large peeled and deveined shrimp, tails discarded, cut into 1/4-inch pieces
- 6 cloves garlic, thinly sliced
- Large pinch crushed red pepper flakes
- 1/2 cup dry white wine
- 1/2 cup fresh parsley leaves, finely chopped
- 1 teaspoon lemon zest
- Slices of crusty bread and/or crackers, for serving
Creamy Tomato Soup

In a heavy bottomed pot (or dutch oven), heat olive oil over medium-high heat
- 2 tablespoons olive oil
- 4 garlic cloves, minced
- 1 large yellow onion, sliced
- 2 (28 oz) cans San Marzano peeled tomatoes
- 1 cup chicken stock (or vegetable stock)
- 2 tablespoons sugar
- 1/4 cup half and half
- 8 large fresh basil leaves, roughly chopped
- 1/4 teaspoon dried oregano
- kosher salt and freshly ground black pepper, to taste
