Cooper's Hawk Clam Chowder

- 3 tablespoons butter
- 4 ounces applewood bacon, cut into 1/4-inch dice
- 3 ounces pancetta, cut into 1/4-inch dice
- 3/4 pound sweet onion, cut into 1/4-inch dice
- 1 1/2 cups 1/4-inch diced celery
- 1 cup 1/4-inch diced fennel
- 1 tablespoon chopped garlic
- 1 tablespoon prepared horseradish
- 1 tablespoon chopped fresh thyme
- 1/2 bay leaf
- 1 tablespoon Worcestershire sauce
- 1 1/2 teaspoons celery salt
- 2 teaspoons sugar
- 1 1/2 cups white wine (Chardonnay or Sauvignon blanc)
- 1 1/2 cups chicken stock (seasoned with salt and pepper to taste)
- 4 1/2 cups clam juice
- 1 1/2 quarts heavy whipping cream
- 1 1/4 pounds clams, frozen, roughly chopped, thawed
- 1 tablespoon cornstarch
- 1 tablespoon water
- Salt and pepper to taste
- 1 1/4 pounds Yukon gold potatoes, peeled and cut into 1/2-inch dice
Pork Meatloaf with Apples and Sage

Preheat oven to 400 degrees F
- 2 large sweet apples, cored, peeled and grated
- 1 large yellow onion, finely chopped
- 2/3 cup day old bread, ground into breadcrumbs in the food processor
- 1/2 cup milk
- 2 pounds ground pork
- 1/2 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/4 cup fresh sage leaves, chopped
- 1 large egg, lightly beaten
- 1 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- Apple ketchup (or any ketchup you prefer)

- 1/4 cup packed brown sugar
- 2 tablespoons rice vinegar
- 2 tablespoons maple syrup

- 2 1/2 lbs beef short ribs (3 to 4 English-style ribs)
- 2 1/2 lbs bone-in chicken thighs, trimmed

- 2 celery ribs, minced
- 8 cups low-sodium chicken broth

- 1/2 teaspoon olive oil
- 1/2 teaspoon minced garlic
- 1/4 teaspoon ground cumin
- 2 (14.5 ounce) cans chicken broth
- 1 cup frozen corn kernels
- 1 cup chopped onion
- 1/2 teaspoon chili powder
- 1 tablespoon lemon juice
- 1 cup chunky salsa
- 8 ounces corn tortilla chips
- 1/2 cup shredded Monterey Jack cheese (optional)
