- 3 cups rolled oats
- 1 cup oat bran
- 1/4 cup ground flax seed
- 1/4 cup wheat germ
- 1 cup raw whole almonds
- 1/2 tsp salt
- 1/2 cup honey
- 1/4 cup dark brown sugar, packed
- 1 tsp vanilla extract
- 3 tbsp canola oil
- 1/4 cup water
- 3/4 cup dried blueberries (or raisins)

- 4 tsp plus 1 tbs olive oil
- 3/4 lb sweet Italian sausage, casings removed
- 1 small eggplant, cut into 1/2 inch cubes

1. Preheat oven to 375 degrees
- 2 sticks (1 cup) unsalted butter, softened
- 1 cup packed brown sugar
- 6 tbsp granulated sugar
- 2 large eggs
- 1 1/2 tsp vanilla
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup all purpose flour
- 2 1/4 cups old-fashioned oats
- 1 1/2 cups packaged finely shredded unsweetened coconut
- 12 oz semisweet or bittersweet chocolate (not sweetened), cut into 1/2-inch chunks (about 2 cups)

- 2 Cups squash, peeled and grated (a great way to use any end-of-season, immature squash)
