Tomatoe Eggplant Pie

Penzey's Recipe This is a tasty breakfast, lunch or light dinner treat
- 1 prepared pie crust (make yourself or purchase)
- 1 large tomato, sliced into 1/4" rounds
- 1 small eggplant or half a medium eggplant, sliced into thinner rounds, peeled if desired
- 1/2-1 tsp salt, to taste
- Spray canola or olive oil
- 1-2 tsp TUSCAN SUNTSET
- 3 eggs
- 1/4 cup milk or plain soymilk (soymilk makes the pie extra creamy)
- 1/4 cup shredded Parmesan cheese
- 1/2-1 tsp Freshly ground pepper

- 1 bag (12 ounces) whole-wheatwide noodles (such as ronzoni Healthy Harvest)
- 1 pound lean ground beef
- 1 container (15 ounces) refrigerated marinara sauce (such as buitoni)

In a 3-1/2- or 4-quart slow cooker combine potatoes, water, onion, bouillon granules, and pepper

- 2 TB. RED or GREEN BELL PEPPER FLAKES
- 1/2 Cup (about 28) sliced or quartered pimiento-stuffed green olives
- 1/2 Cup mayonnaise (regular works best for this recipe)
- 11/2 tsp. REGULAR CHILI POWDER (add more or use a hotter blend for more kick)
