Greens, Eggs and Ham Frittata

Preheat oven to 350°. In a large bowl whisk together eggs, cheese, ham, and 1/4 teaspoon black pepper
- 10 large eggs
- 1-1/2 c shredded Monterey Jack cheese
- 1/2 c finely grated Pecorino Romano or Parmesan cheese
- 4-6 thin slices smoked ham, torn into pieces
- 2 T butter
- 2 T olive oil
- 1 large spring onion or 4 green onions, sliced into thin rounds
- 10 oz. kale or spinach

- 1 cup plus 6 tablespoons unsalted butter, softened
- 1 3/4 cups sugar
- 4 eggs, room temperature
- 2 vanilla beans, halved lengthwise and seeds scraped
- 1/4 teaspoon almond extract
- 1 cup buttermilk
- 1/2 cup light brown sugar, packed
- 3 tablespoons heavy cream
- 1 cup pecan halves
- 1 teaspoon vanilla
Baked Macaroni and Cheese

Preheat oven to 350. In large pot of boiling, salted water, cook pasta al dente
- 1/2 lb. elbow macaroni
- 6 T butter
- 3 T flour
- 1 T powdered mustard
- 3 c milk
- 1/2 c finely diced yellow onion
- 1 bay leaf
- 1/2 t paprika
- 1 large egg
- 12 oz. Sharp cheddar, shredded
- 1 t kosher salt
- Pepper
- 1 c panko bread crumbs

Apple Spiced Olive Oil Cake

Preheat oven to 350. Sift together flour next 5 ingredients
- 1-1/2 c flour
- 1 c sugar
- 1-1/2 t each baking soda and baking powder
- 1 t each cinnamon and salt
- 1 c olive oil
- 3/4 c milk
- 1/4 c each orang liqueur and OJ
- 2 extra large eggs
- 1 unpeeled baking apple (McIntosh, Jonathan or Rome), cored and grated
- Powdered sugar

- 1 c heavy whipping cream
- Butterscotch Cream
- 3 oz. cream cheese, softened

- 1/4 c butterscotch instant pudding mix

- 1/2 c heavy whipping cream
