Pineapple-Cream Cheese-Cheese Log

Mix all with mixer. Put back in fridge for 1/2 hour, divide in half, roll into logs and roll in chopped pecans
- 2-8 oz. Pkgs. cream cheese
- 16 oz. Can crushed pineapple, well drained
- 1/2 c finely chopped dried apricots
- 1/4 t cinnamon
- Chopped pecans
Clam Chowder

Mix together and heat
- 1 boiled and mashed pootato
- 1 can cream of potato soup
- 1 can evaporated milk
- 1 can baby clams including liquid
- 1 onion fried in butter
Double-Apple Mini Bundt Cakes

Put rack in center of oven and preheat to 350
- 2 c flour
- 2 t baking powder
- 1/2 t baking soda
- 1/2 T cinnamon
- 1/4 t salt
- 1/4 t nutmeg
- 1/4 t ginger
- 10 T unsalted butter, softened
- 1-1/2 c sugar
- 2 eggs
- 1 c apple butter, spiced or regular
- 2 medium apples, peeled, cored and grated
- 1 cup pecans or walnuts, chopped
- 1/2 c plump raisins (if necessary, place in bowl and cover with hot tap water; let soak 5 minutes, drain and pat dry)
- 2/3 c powdered sugar
- 4-6 t fresh orange or lemon juice
Fresh Brazilian Salsa

Mix all ingredients together
- 2 cloves garlic, minced
- 1/2 c cilantro leaves, finely chopped
- 1 jalapeno, seeded and finely chopped
- 3/4 c chopped Vidalia onion
- 2-1/4 c chopped tomatoes (use 1/2 real and 1/2 from a can with juice)
- juice from one lemon
- 1/4 c olive oil
- 1/4 t cumin
- salt and pepper to taste
Potato Chip Cookies

Cream butter and sugar and add vanilla and stir in flour
- 1 lb. butter
- 1 c sugar
- 1 t vanilla
- 3-1/2 c flour
- 2 c crushed potato chips -- not too fine
- 1 c chopped pecans
Creamy Ranch Hummus

Place all ingredients in a food processor and combine until smooth
- 4-1/2 c canned garbanzo beans, drained and rinsed
- 1-3/4 c buttermilk
- 1 c chopped chives
- 1-1/2 T dried dill
- 1/2 T garlic powder
- 1/2 T onion powder
- 1/4 c finely grated Parmesan cheese
- 1 T salt
- Juice of 1 Lemon
- Olive oil for drizzling
Marinade for Pork, Beef or Chicken

In a large saucepan whisk together the apple juice and vinegar over med heat
- 3 c apple juice
- 1 c white vinegar
- 1/4 c sugar
- 3/4 c kosher salt
Salad with Champagne-Cranberry Vinaigrette

Toast walnuts in a dry skillt over med heat (about 3 mins)
- 1/2 c halved walnuts
- 1/2 c champagne or lemon-lime soda
- 1/2 c canned jellied cranberry sauce
- 1/4 c minced shallots
- 1 t Dijon mustard
- 2 T olive oil
- Salt and pepper
- 6 c mixed salad greens
- 2 pears cored and diced
- 1/2 c diced cranberries
Carrot Slaw

Stir all ingredients together and chill 3-4 hours
- 8 c carrots, shredded
- 3/4 c Mayonaisse
- 1/2 c sugar
- 1/2 c vinegar
- 1 T onion, minced
- Dash salt and pepper
- 1/4 c raisins
- 3/4 c pineapple, crushed and drained
- 1/4 c walnuts, chopped
Asparagus Gruyere Tart

Preheat oven to 400. On floured surface, roll the puff pastry into a 16'x 10" rectangle
- flour for work spaces
- 1 sheet frozen puff pastry
- 5.5 oz. gruyere cheese, shredded (2 c)
- 1.5 lbs. med or thick asparagus
- 1 T olive oil
- salt and pepper
