Ricotta Meatballs

- Four slices white bread, torn into half inch pieces
- 2 pounds ground beef chuck
- 8 ounces thinly slice prosciutto Cotto or deli ham, finally chopped
- 1 cup whole milk ricotta cheese
- 3 ounces pecorino Romano cheese, finely grated (about one cup)
- One yellow onion, grated (about half cup), gently squeeze to remove liquid
- 1 tablespoon kosher salt
- 2 teaspoons dried oregano
- 1 teaspoon fennel seeds, chopped
- 1/2 teaspoon pepper
- Four eggs
- 2 tablespoons olive oil
Peanut Chocolate Bark

Melt milk chocolate in microwave, stirring occasionally
- 12 oz finely chopped milk chocolate
- 1 T melted shortening
- 4 oz chopped semi-sweet chocolate

PB&J Bars

Heat oven to 350. Butter 8" square baking dish
- 1/2 c (1 stick) unsalted butter, at room temp, plus more for the baking dish
- 1/2 c raspberry jam
- 1/2 c fresh raspberries, mashed
- 1-3/4 c flour, spooned and leveled
- 1/2 t salt
- 1/2 t baking powder
- 3/4 c sugar
- 1 large egg
- 1 t vanilla
- 1 c creamy peanut butter
- 1/2 chopped salted, roasted peanuts
Loaded Baked Potato Dip

Pierce large potato and microwave on high for 10-12 minutes
- 1 large potato, baked
- 6 slices bacon, cooked crisp
- 2 c plain Greek yogurt
- 2 c cheddar cheese, grated
- 3/4 c milk, warm
- 4 T unsalted butter
- 1/2 c chives, chopped
- 1 t salt
- 1 t pepper
- Potato chips (optional)
- Celery (optional)
- Endive leaves (optional)
Caramel Apple and Pretzel Pie

In large bowl, mix all ingredients together with a spoon until well combined
- Pretzel Crust
- 1-1/2 c ground pretzel crumbs, toasted
- 1/2 c graham cracker crumbs
- 1-1/2 T dark brown sugar
- 1 t kosher salt
- 3 T unsalted butter, melted
- 1 T heavy cream
- Apple Filling
- 3-1/2 T unsalted butter, melted
- 2-1/4 c white chocolate chips, melted and divided
- 6-1/2 T heavy cream
- 3 t vanilla
- 1 egg yolk
- 1/2 c plus 3 t flour
- 1 t kosher salt
- 1 c (about 1/2 can) canned apple pie filling
- 3/4 c butterscotch chips, melted

Mini Party Quiches

Preheat oven to 425. Coat 24 1-3/4" muffin cups with cooking spray; set aside
- Nonstick Cooking Spray
- 2 c flour
- 2 T grated Parmesan cheese
- 1/2 t salt
- 1/3 c olive or vegetable oil
- 5-7 T ice-cold water
- 1 egg
- 1/3 c milk
- dash of pepper
- 1/3 c finely shredded Monterey Jack or Gruyere cheese
- 1 T chopped green onion
- 5-6 pear or cherry tomatoes, thinly sliced, and/or 24 small herb leaves
- fresh thyme leaves (optional)
Classic Chicken and Dumplings

Heat oil in large pot over med-heat
- 1 T olive oil
- 6 bone-in, skin on chicken thighs (about 2 lbs.)
- kosher salt
- black pepper
- 4 stalks of celery, chopped
- 4 carrots, chopped
- 2 onions, chopped
- 2 t thyme
- 2 cloves garlic, chopped
- 2 bay leaves
- 2-1/2 c flour
- 1 T baking powder
- 1/2 t baking soda
- 6 T (3/4 of stick) unsalted butter, melted
- 3/4 c buttermilk
- 2 T chopped fresh parsley leaves
