Cornbread

You can make and store the dry mix for this cornbread up to 3 months
- 1 1/2 cups flour
- 1 1/2 cups stone-ground cornmeal
- 1/4 cup sugar
- 1 1/2 tablespoons baking powder
- 1 teaspoon kosher salt
- 3/4 teaspoon baking soda
- 1 1/2 cups milk
- 1/2 cup vegetable oil
- 3 eggs
Fruit & Nut Cookies

These oat bran cookies with dates and pecans are great served with a cold glass of milk
- 4 lightly beaten eggs
- 1 1/3 cups brown sugar, packed
- 6 tablespoons butter, melted
- 2 teaspoons vanilla
- 1/2 cup dry dates or figs, chopped and pitted
- 2 cups flour
- 1 cup whole wheat flour
- 1/2 cup oat bran
- 1/2 cup pecans, chopped and toasted
Turkey Salad with Manchego

Healthy and simple salad of Romain lettuce, green beans, carrots, turkey and manchego cheese
- 1/4 cup olive oil
- 3 tablespoons fresh lime juice
- 1/2 teaspoon ground cumin
- Kosher salt
- Black pepper
- 2 medium carrots, grated (about 1 cup)
- 4 ounces green beans, sliced crosswise
- 4 scallions, sliced
- 1 head romaine lettuce, torn
- 3/4 pounds sliced deli turkey
- 4 ounces manchego cheese, sliced
Cranberry BBQ

Stir together and brush on ham in the last 45 minutes of baking
- 1/2 c Jellied cranberry sauce
- 1/2 cup or bottle of barbecue sauce
- 2 tablespoons honey
Mustard Sauce

Put all dry ingredients in sauce pan on low
- 1/4 c dry mustard
- 2 T sugar
- 1/8 t salt
- 1/4 c cider vinegar
- 1 egg, beaten
- 1/2 c Mayonaisse

- 2 (15-ounce) containers ricotta
- 12 ounces semisweet chocolate, melted and cooled
- 9 ounces chocolate wafer cookies
Pull Apart Christmas Tree

- 1 lb. pizza dough
- 1 egg, whisked
- 6 mozzarella sticks
- 1/4 c melted butter
- Grated Parmesan, to taste
- 1 T chopped basil
- 1 T chopped parsley
Romesco Sauce

Blend together in food processor until smooth
- 12 oz. jar roasted red peppers, drained
- 1 garlic clove, chopped
- 2 T roasted almonds
- 1 t kosher salt
- 1/4 t pepper
- 4 t red wine vinegar
Sweet and Sour Sloppy Joes with Sesame Slaw

Heat 1 T oil in large skillet over medium-high heat
- 2 T oil, divided
- 1 bunch scallions, chopped
- 1 T grated ginger (less if dried)
- 1 lb. ground beef
- 1/4 c soy sauce
- 1/4 c tomato paste
- 3 T light brown sugar
- 1/4 t Kosher salt
- 1/2 t Pepper, divided
- 1/2 c water
- For Slaw
- 1/2 small head cabbage, thinly sliced
- 2 carrots, grated
- 1/2 c fresh cilantro (less if dried)
- 1/4 c lime juice
- 2 t toasted sesame oil
- 4 hamburger buns
Sauce for Pork Roast

Combine and slightly warm sugar and vinegar
- 2 c sugar
- 1 c white vinegar
- 1 c water
- 2 t onion or green pepper
- 1 t salt
- 4 t corn starch
- 2 t water
- 2 t paprika
