Mint Chocolate Chip Frosting

Chop candy. Beat butter on low for 2 mins until creamy
- 1/4 c butter, softened
- 2-1/4 t vanilla
- 1-2/3 c powdered sugar
- Pinch of salt
- 1/2 pkg (4.67 oz) chocolate mint candies (14 candies), chopped
- 3-4 drops green food coloring
Mashed Potato-Egg Casserole

Microwave potatoes 12 minutes
- 5-6 potatoes
- 4 medium leeks
- 5 cloves garlic, minced
- 2 T butter
- 8 oz. sour cream
- 1 c shredded Asiago cheese
- 3/4-1 c milk
- 6 eggs
- 1 T olive oil
- 1/2 lemon, juiced
- 2 c baby spinach
Carmelized Pear and Blue Cheese Quiche

Preheat oven to 325. Set pastry shell on baking sheet
- 1 deep dish pie shell, baked
- 3 medium firm pears, 2 cored, 1 whole
- 2 T unsalted butter, divided
- 1 T sugar
- 1/2 c crumbled blue cheese
- 6 large eggs
- 2 c plan fat-free Greek yogurt
- 1 c 2% milk
- 1/2 t salt
- 1/4 t white pepper
- 1/8 t nutmeg
French Yogurt Cake

Preheat the oven to 375 degrees
- 2 (6oz) Containers of Plain Yogurt (Keep the Containers for Measuring)
- 2 Containers (The Container We Told You to Keep) of Sugar 3/4 of the Way Full
- Just Under 1 Container of Vegetable Oil
- 4 Containers Flour
- 1 Container Mini Chocolate Chips
- 1 Container Frozen Berries of Your Choice
- 1 Teaspoon Vanilla
- 1 1/2 Teaspoons Baking Powder
Chicken Piccata

Put chicken in between pieces of plastic wrap and pound until they are a half inch thick
- 2 whole chicken breasts, halved, no skin or bones
- 1/4 cup flour
- 4 tablespoons butter
- 1 cup sliced fresh mushrooms, 8 ounce bo
- 1 garlic clove minced new line 1/4 cup dry white wine
- 2 tablespoons lemon juice
- 2 tablespoons lemon pepper
- 2 tablespoons chopped parsley
Gnocchi with Brown Butter, Pecans and Basil

Cook gnocchi according to package directions
- 2- 16 oz. pkgs. potato gnocchi
- 6 T unsalted butter
- 2 cloves garlic, crushed
- 1/2 c coarsely chopped pecans
- 1 t lemon zest plus1 T fresh juice
- 1 t Kosher salt
- 1/4 t pepper
- 3 c packed torn basil leaves, divided
- 1/4 c parmesan cheese, grated
Spicy Apple Glazed Meatballs

For the meatballs, in a large bowl, whisk together egg and milk
- 1 egg
- 1/4 c milk
- 2 slices white or whole wheat bread, torn
- 1 lb. lean ground beef
- 1/2 t pepper
- 1/4 t salt
- 1/4 t cayenne pepper
- 1 t vegetable oil
- 1 c apple juice
- 1/4 c soy sauce
- 3 T packed brown sugar
- 1-1/2 t cornstarch
- 1 t ground ginger
- 1/4 t cayenne pepper

- 1 1/2 c roasted salted peanuts

- 1/2 c heavy whipping cream
