- 1 1/2 1 1/2 1/2 cups yellow onion, chopped (1 medium yellow onion)
- 3 3 3 cloves garlic, chopped
- 1 1 can 1 (28-ounce) can crushed tomatoes
- 3/4 3/4 3/4 teaspoons pepper, divided
- 8 8 8 ounces mixed wild mushrooms, sliced (shiitake, oyster, cremini)
- 5 5 5 ounces baby spinach, roughly chopped (about 5 cups)

Cook or grill chicken and cut into bite-sized pieces
- 1-2 lbs. chicken
- 1-48 oz. jar great northern beans
- 1-16 oz. jar Chi-Chi salsa -- hot
- 1/2 -1 -8 oz. block Monterey Jack cheese
- 2 t ground cumin
- 1 small can green chilies
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 red pepper, chopped
- 1 green pepper, chopped
- 2 jalapeno peppers, chopped fine
