Preparation
Step 1
Preheat oven to 325. Set pastry shell on baking sheet.
Cut 2 pears into 1/2" cubes. Cut remaining pear into thin slices.
In a large skillet, melt 1 tablespoon of butter over medium high heat. Add cubed pears and sugar. Cook, stirring occasionally, 7 minutes or until lightly browned. Transfer to pastry shell. Sprinkle with blue cheese. Melt remaining 1 tablespoon of butter in skillet. Add pear slices. Cook, stirring occasionally, 3-4 minutes or just until softened.
For the custard, in a blender, combine eggs, yogurt, milk, salt, pepper and nutmeg. Cover and blend until frothy.
Pour custard over filling in pastry shell. Arrange pear slices on custard. Bake 1 hour and 20 minutes to 1 hour and 30 minutes or just until top is lightly browned and custard is set in center. Cool in pan on wire rack for 40 minutes. Remove pan ring. Cut into wedges. If desired, sprinkle with additional blue cheese.
